John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. The best-selling MKII Magnetic Drive Pump now available with a major upgrade! This unit comes standard with an inline stainless steel pump head that installs on the pump body with a 3″ tri-clamp. Compared to the standard “center inlet” pump head, the “inline” flow path can make it much easier to integrate into your brewery and keep your brewing hoses tidy. At the outlet of the pump, there is a very handy pull ring PRV that allows you to bleed liquor or wort from the pump head to release trapped air and prime the pump. And with the 3″ T.C. connection, not only do you have a full 360-degrees to orient the pump head any which way, cleaning the pump after use could not be easier—just pop off the tri-clamp, wash out the pump head, and clamp back on.

The MKII is a perfect pump for your system and comes highly recommended for brewers stepping up to all-grain brewing. Rather than schlepping heavy kettles filled with hot liquor or wort around your brewery, or awkwardly stacking them into a 3-tier gravity setup, allow this handy pump to move liquid from vessel to vessel while everything remains in place. The magnetic drive allows you to slow down the flow without damaging the pump. This can be done by attaching a ball valve to the outlet side of the pump, and then you simply open or close the valve to control the flow rate. The pump itself is not self-priming, but priming is super easy thanks to the pull ring PRV which will help ensure the pump head is full of liquid and trapped air is released before powering it on.

Tri-Clamp Pump Head
The T.C. pump head can be removed quickly and easily using the 3″ tri-clamp. This means no drivers or power drills are needed to back out the six Phillips head screws that mount the pump head on the standard version of the MKII. Whip the head off in a flash to clear out spent grain, hop material, or clear a blockage. Attaching the pump head with a tri-clamp also allows the head to be rotated at any angle in a full 360-degrees. This makes it easy to configure the plumbing to your unique brewery setup.

Inline Design
An “inline” pump head simply means the input and output are on a straight horizontal line with one another which can make it easier to integrate into your brewery setup. If you’re using a 3-vessel horizontal system, the inline pump head will make it easier to keep your hoses neat and tidy compared to pumps heads with a center inlet.

PRV Purge Valve
The corny keg style PRV will make priming the pump a breeze. Simply let bleed the pump head to purge air out before turning the pump on and you’ll avoid any cavitation issues. The PRV also acts as a safety so you do not over pressurize your pump head or brewery system.

304 Stainless Steel
The entire pump head is made from 304 grade stainless steel so it’s highly resistant to chemicals, heat, and physical abuse. The 1/2″ BSP threaded ports can be used to attach barbs, quick disconnects, camlocks, tri-clamp adapters, or any other 1/2″ fittings you prefer.

Hands on Review: Chapman Thermobarrel Stainless Steel Mash Tun

Coolers being used for mash tuns are quite common in the homebrew world. This makes sense because they are some common household gear that can be easily repurposed for homebrew use, and they do a great job doing what you need while mashing- hold temperature steady. Steady mash temperatures gets you on the path to repeatability. And no one likes brewing with an “I don’t know we’ll see if this turns out” approach.

1-inch Thick Insulated Walls

The Chapman Thermobarrel is essentially just like a big Gatorade drink cooler, but instead of the insulation being wrapped in hard plastic, it’s skinned in stainless steel. The stainless skin makes it easy to clean and sanitize, and you don’t have to worry about long-term discoloration or scratches in the plastic. The insulated walls are 1” thick, and the base and lid have just under 1” of insulation or insulating air gap.

  • Gamma Seal Lids – Hands on Review – are a great upgrade to standard buckets.  You attach the base of the unit to the bucket and leave that intact.  The lid screws on and off easily.  No more prying lids off.  These are also airtight.  I use buckets with Gamma Seal Lids as my primary storage for bulk grain and recipe kits.
  • How much grain can you store in a 5 gallon bucket?  My rule of thumb for grain storage capacity is 5 lbs per gallon.  With that estimate a  50 lb sack of grain fits in (2) 5 gallon buckets.  That’s a rough estimate, actual storage capacity will vary.

Sourvisiae® is a bioengineered ale yeast strain (Saccharomyces cerevisiae) capable of producing lactic acid during fermentation to provide brewers with an easy, reproducible, and mono-culture product for sour-style beer production.

Sourvisiae® contains a single genetic modification, a lactate dehydrogenase gene from a food microorganism, which enables the yeast to produce high levels of lactic acid, the main compound that gives sour beers their flavor. Sourvisiae® allows the brewer to ferment and sour the beer in one simple step, reducing cross-contamination risks, lowering costs, cutting total process time, and allowing brewers to obtain a consistent product. The brewing process is conducted without any modifications; Sourvisiae® is pitched just like conventional yeast and ferments in a normal fermentation time. Sourvisiae® does not produce other flavor compounds associated with Brettanomyces, Lachancea, or Lactic Acid Bacteria, providing a cleaner and more reproducible souring process, with much shorter fermentation times.

Microbiological Properties
Classified as a bioengineered Saccharomyces cerevisiae, a top-fermenting yeast. Finished product is released to the market only after passing a rigorous series of tests. *According to the ASBC and EBC methods of analysis.

Typical Analysis of Sourvisiae® Yeast:

  • Percent solids 93% – 96%
  • Living Yeast Cells ≥  5 x 10 9 per gram of dry yeast
  • Wild Yeast < 1 per 10 6 yeast cells
  • Bacteria < 1 per 10 6 yeast cells

Brewing Properties
In Lallemand’s standard conditions, wort at 20°C (68°F), Sourvisiae® yeast exhibits:

  • Vigorous fermentation that can be completed in 5 days
  • Medium to High Attenuation and Medium to High Flocculation
  • Highly acidic and slightly fruity flavor and aroma

The optimal temperature range for Sourvisiae® yeast when producing traditional styles is 15°C (59°F) to 22°C (72°F).

Fermentation rate, fermentation time and degree of attenuation are dependent on inoculation density, yeast handling, fermentation temperature and nutritional quality of the wort.

Attenuation may appear lower due to the formation of lactic acid. Production of lactic acid does not result in a loss of CO2. When sugar is consumed to produce lactic acid, there is no change in density. Therefore, the amount of residual sugar in the finished beer is lower than the final density would imply.

This yeast produces a very acidic beer, with final beer pHs in the range of 3.0 and lactic acid in the range of 8 – 15g/L. Vigorous fermentation can be completed within 5 days.

The resulting flavor and aroma profile of the beer is a slightly fruity acidic beer. Because of the resulting low pH and highly acidic conditions, we do not recommend re-pitching this yeast.

The Vittles Vault line of containers are very popular for bulk grain storage.  They have a large opening for easy access and have an airtight design.

The 25 lb size is said to be 6.5 gallons.  My estimate for unmilled grain storage is 5 lbs per gallon.  At that rate an 6.5 gallon container would hold about 32.5 lbs of grain that’s a rough estimate, actual storage capacity will vary.

John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982.
