When you put a beer on tap the carbonation level is a function of temperature and CO2 pressure.  In a nutshell… higher carbonation levels (or temperatures) require higher CO2 pressures.  See: Balancing Your Draft System for more info.

Higher CO2 pressures need to be offset with appropriate resistance.  A Hefeweizen at 20 PSI isn’t going to serve well with your typical 5′ of beer line.  You need to add stuff to produce resistance so that when you’re beer hits the air it’s not speeding like a rocket ship toward your glass.  Many times that’s done by increasing tubing lengths.  That can work but does have some down sides.  Chief among those, at least to me, is you can end up having a good amount of beer sitting in those lines.  Temperatures are usually higher toward the top of your kegerator [See: Kegerator Beer Line Temperatures & Reducing Foam with a Recirculating Fan], so that means your first pint is still going to be foamy.  This also results in some guesswork and requires that you swap tubing out when you change carbonation levels.

This allows you to restrict flow to reduce foam without the need for additional tubing or a specific faucet.  You use the provided Allen wrench to adjust resistance.  This means no adding additional tubing on a beer beer or carbonation level basis.  Easy to disassemble for cleaning

If you are currently using a long length of tubing to increase restriction you can now shorten your tubing. A shorter line holds less beer. Beer that is stored in the line tends to warm up quicker, adding to foaming issues, and is more likely to stale from bacteria present in the line.

The flared outlet on the side that goes to the stainless ball lock fitting can be unscrewed and leaves a 1/8″ female NPT port. Into this port you can screw any 1/8″ NPT male thread hose barb or threaded outlet.

Building A Spunding Valve – Option 3 with Brass Fittings

A Spunding Valve allows you to maintain a set pressure.  If pressure in the pressure vessel exceeds the set point, it is expelled.

Some homebrewing applications…

  1. Pressurized fermentation.  Ferment in a 5 or 10 gallon corny keg and use your Spunding Valve instead of an airlock.  This allows you to ferment at your desired pressure.
  2. Dry hop under pressure.  This allows you to dry hop earlier while reducing oxygenation.  Active yeast are more likely to metabolize oxygen that’s introduced during dry hopping during active fermentation.  Since CO2 is not exiting beer as vigorously under pressure, wanted compounds, flavors and aromas are more likely to stay in your beer under pressure.
  3. Naturally and accurately carbonate beer right in the keg.
  4. An airlock replacement.  Keep the valve wide open for non-pressurized fermentations.  Only do this if you have plenty of head space.  This wouldn’t make a great blow off tube.
  5. Keg to keg transfers.  Use the Spunding Valve to allow excess gas to exit the receiving keg as you transfer under pressure.  Helps you achieve a slow, controlled and pressurized transfer.
  6. Fix over-carbonated beers.  Use the same general process as for carbonation (skipping the addition of fermentable sugar).  Use a carbonation chart to determine proper pressure for the temperature the keg is at.  The Spunding Valve allows excess pressure to vent until the new carbonation level is achieved.  You can agitate the keg to fix carbonation more quickly.
  7. Test for keg leaks.  Pressurize your keg to serving pressure.  Put the Spunding Valve on (with the pressure set well above your serving PSI) and note the reading.  The gauge should remain steady.  If pressure drops, you know you have a keg leak.  It’s worth noting that this checks the entire keg including gas body o-ring.  That spot is hard to check and other way as it’s only in function when the gas QD is on.  When the gas QD is on… it’s difficult to spray and check for bubbles underneath the gas QD.  Thanks to Scott Janish for this tip!

PET Bottles as Growlers: These are generally intended to convert 1L and 2L bottles to growlers.  Fill up a 1L or 2L PET bottle with your favorite homebrew.  Put one of these on (purge the headspace by squeezing if you want to) and then pressurize for transport.  This should help to reduce oxygen pickup and maintain carbonation levels.

Fine tune or rapidly carbonate beer: You can also use this cap to rapidly carbonate beer.  Same process as for transport, just set your regulator to the proper pressure and shake or agitate the PET bottle to help introduce CO2.  Or hook it up to CO2 and let it sit in you kegerator.

Portable Serving: As an on-the-go regulator.

Backup – I’m out of CO2 and I want to pour a beer! Use as a backup if your main CO2 tank runs out.  Swap out the CO2 line for this regulator and you’ve got a temporary solution to keep you up and going until you can get more CO2.

Serve Beers at Alternate Carbonation Levels: This regulator goes up to 30 PSI.  That’s plenty to serve high carbonation beers like Hefeweizens and Belgians.  If you don’t have a dual or triple pressure setup, you could use this regulator to serve beers at higher pressures.  I would not suggest force carbonation with this unit.  The 74g cartridges would be pricey. You could carbonate using your existing regulator or just as easily naturally carbonate with priming sugar.  After the beer is completely carbonated, use this to serve at the higher pressure.

This adjustable pressure relief valve has a sensitivity of 0 to 15 psi. It has a 1/4″ female flare fitting on one end, which attaches to any threaded ball or pin lock gas fitting. Use this to make a keg pressure relief valve. Adjust the relief pressure by turning the knob on the right side of this assembly. Also known as a Spunding Valve.

Stainless Carbonation Cap for PET Bottles + Draft Line Cleaning Builds

Stainless steel ball lock carbonation caps with 5/16″” barb.

PET Bottles as Growlers: These are generally intended to convert 1L and 2L bottles to growlers.  Fill up a 1L or 2L PET bottle with your favorite homebrew.  Put one of these on (purge the headspace by squeezing if you want to) and then pressurize for transport.  This should help to reduce oxygen pickup and maintain carbonation levels.

Fine tune or rapidly carbonate beer: You can also use this cap to rapidly carbonate beer.  Same process as for transport, just set your regulator to the proper pressure and shake or agitate the PET bottle to help introduce CO2.  Or hook it up to CO2 and let it sit in you kegerator.
