Oliso SmartHub for Small Batch Brewing

If you don’t know what a sous vide machine is, that’s forgivable. I’ve only met one person that’s used one. He raved about it so much that I had to investigate it. “Sous vide” is French for “under vacuum”. In sous vide cooking, you vacuum seal your steak (or whatever kind of food) in a bag, then place it in a pot of water that’s controlled to a specific temperature. The sealed bag keeps the meat from getting wet in the cooking water, and lets all the juices stay inside and not dry out. Depending on the “doneness” you want, you set the temperature of the water, throw your pouch in and then it cooks to the exact level you want.

Now getting us back to homebrewing, Oliso has a sous vide cooker that has features that support homebrewing. They combined the temperature control features of a traditional sous vide machine with the high power capability of an induction cooktop. The induction cooktop functions as the base of the machine, and when you set the SmartHub top on it, electrical contacts are made that change the induction top over to a temperature control machine. The tub has a built-in sensor that it uses to monitor the temperature of the liquid and adjust the power level accordingly.

This 304 grade stainless heating element is 1600 watts, and is designed for heating mash and strike water. Malt solution will burn onto the element, so this should be used for heating water only. It will heat up to 10 gallons of strike or sparge water to 175° F. in approximately 1½ hours, providing the ambient temperature is 65° F. or warmer. It must be plugged into a suitable thermostat* for use, and should never be plugged into a wall outlet (because it will never turn off). It must be operated submerged in water, and never dry. Ideal for building your own electric strike and sparge water heater.

To give you some idea of the heating power of this wand, we mounted it in a Brewer’s Edge 76 Quart BrewKettle filled with 10 gallons of water at a starting temperature of 67° F. with the wand plugged into a Brewer’s Edge Mash Heat Control. The log is below:

10:34AM 77° F.
11:00AM 112° F.
11:30AM 143° F.
11:59AM 175° F.

It can be mounted weldessly in a 1.25″ diameter hole that you drill with your metal rated holesaw or suitable step drill bit (hole saw not included), and features a silicone sealing washer to seal against leaks.

It must be installed in a stainless steel pot, and should not be used handheld or for another other application than heating water.

The stainless element length is 12″, and the overall length with the cord mount on the back is 16″.

It features a 20″ cord which must be plugged into a heavy duty (15 amp) computer power cord (not included). A good cord to buy for this is the Tripp Lite Heavy Duty Computer Power Cord, 15A, 14AWG (NEMA 5-15P to IEC-320-C13).

*Suitable thermostats include controls that have a capacity of 15 amps or greater.

Possible brewing uses could include: getting and keeping strike water at temp, direct use (with a filter bag in a mash tun or BIAB mash), maintaining temperature for sour mashes and getting to a boil more quickly (or helping to maintain a boil) for both all grain and extract batches. This DigiBoil model has three built-in heating elements that run off a 220V plug. The elements are 2000w, 1000w and 500w for a combined 3500 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage all three elements to quickly go from steeping temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s).

Integrated stainless ball valve comes with a 13mm barb (approx. 1/2″). The barb can be removed to attach 1/2″ FPT fittings if desired.
