The brown ales of Merry Old England are a delight to the palate and to the eye. The rich brown color and malty flavor are perfect for a blustery day indoors. Northern brown ales are not as sweet and caramel as the brown ales of London, which gives them better drinkability. Some recipes are described as nutty, but there are no nuts involved, it is purely due to the toasty sweet, cookie-like flavor of the malts.
The award-winning recipes from Brewing Classic Styles by Jamil Zainasheff and John Palmer, prepared and assembled into ready-to-brew ingredient kits! These kits have been specially designed to be brewed at home on your kitchen stove with a minimum of equipment. Each kit comes with clear, illustrated brewing instructions for the general brewing process and step-by-step instructions for brewing that particular kit. The kits range from extract-only, to extract and steeping grains, to extract and partial mash and contain everything needed to brew 5 gallons of beer. English IPA is often misunderstood due to the myths and legends of its origin at Burton-upon-Trent. The secret to this beer is not the highly mineralized ground water of the region, but balance in all aspects. The water does have higher proportions of calcium and sulfate than other typical water sources, and this does serve to punch up and dry out the hop finish, but this is only one aspect of the whole. The malt body of this beer is rich, warm and toasty, but not overly sweet or heavy. The hop bitterness, flavor and aroma all serve to crown this beer with greatness. Noblesse Oblige.
The ales of Burton upon Trent were famous for their crisp bitterness and bright color. This is the beer that sailed on Her Majesty’s many ships to far-off India and its legend inspired the craft beer movement in the United States.
