Hands on Review: Fermonster Fermentors + Limited Time DEAL

Fermonster PET Fermentor

With all of the fermentor choices out on the market, there are plenty of good reasons to not be fermenting in that plastic bucket that came with your starter homebrew kit. Most of us make that realization when we can no longer fool ourselves into calling it “white”, and it carries the aroma of all the previous hop varieties it’s seen. PET Plastic fermentors are the logical next step up from the HDPE plastic buckets.

PET Is far less porous than HDPE. Because of that, it makes for a great oxygen barrier. As a material, HDPE passes through 50x the amount of oxygen over a given time than PET. So PET makes for better long ferments like if you’re lagering (or are just the forgetful type). Glass is an even better oxygen barrier, not allowing any oxygen to permeate it. But from a practical perspective, just like Coca-Cola figured out, glass is heavy and creates a nasty mess when you drop it. PET Is also cooler than that plastic bucket because the fermentor is clear, which allows you to view the exciting chemistry going on inside your brew.

The Fermonster comes in different sizes and options. They come as big as 7 gallons or as small as 1 gallon. And also intermediary sizes of 6 gallons and 3 gallons. You can get it without a spigot or with one if you want to do gravity beer transfers instead of using a siphon.

The Cannular is a manual can seamer that is easy to use, reliable and beautifully simple.

Whether you’re a brewery looking to offer canned beer to go or a homebrewer wanting to keep your creations fresh and fully protected from light, the Cannular is the answer. This bench top unit is one of the most compact and easy to use can seamers you’ll find. The Cannular only requires one person to operate, and each can takes roughly 5 seconds to seam. With a two-person team, one filling and one seaming, the Cannular becomes a suitable option for nano breweries doing small canning production runs.

Operation:
The beauty of the Cannular lies in how truly simple it is to operate. With only three points of operation, it only takes a few minutes to familiarize yourself with the machine. The seaming process is as follows:

Place lid atop the can and place the can on the platform
Turn the platform lever clockwise to raise the can to the seamer
Press the button to turn the machine on and begin spinning the can
Push the seaming lever away from you and hold for 1-2 seconds
Pull the seaming lever towards yourself and hold for 1-2 seconds
Press the button to turn off the machine and stop spinning the can
Turn the platform lever counterclockwise to lower the can
That’s all there is to it!

Construction:
The Cannular was designed to be compact, durable, and safe to operate in a wet environment. The platform assembly is made from 304 grade stainless steel, so no matter how messy your canning gets, there’s no need to worry about rusting or degradation. The body of the unit is made from hammered sheet metal and bolted together with stainless steel screws. Rubber feet help keep the unit from slipping and sliding while in use. Additionally, the Cannular features built-in brackets near the feet so you have the option to mount the machine to your counter or benchtop. The Cannular runs off of 24v DC power via the Anderson socket located on the back. This lower voltage was chosen specifically to make the unit as safe to use in a wet environment as possible.

Power:
As noted above, the Cannular comes with a 24v DC Anderson socket located on the back of the unit. It does not, however, include a cord and plug. When purchasing the unit, you’ll have the option of pairing it with either a power supply with 110v plug, or with a 6 ft. long cord with Anderson plug and alligator clips. The power supply is straight forward, and allows you to plug the unit into a standard 110v power socket. The alligator clips give you the option to power the unit from a battery, and can even be used with an 18v cordless power drill battery. This is certainly the most affordable option for powering the Cannular, and we’ve found that upwards of 200 cans can be seamed on a single battery charge.

Why Cans?
So why can when you can bottle? There’s no doubt that canning has become a more and more popular format for packaging beer among craft breweries over the last several years, and with good reason. Aluminum cans aren’t just more environmentally friendly than bottles, since cans require less energy to transport and recycle, they’re also much better at protecting the quality of the beer. Whereas bottles allow in light, which leads to skunking, aluminum cans offer 100% protection from UV and other wavelengths of light that are harmful to beer. There’s still great debate surrounding whether cans or bottles are better at keeping beer fresh, but if done correctly, cans are theoretically the superior option. When a crown cap is crimped onto a bottle, the lining of the cap can form an imperfect seal on the bottle, allowing small amounts of oxygen in, as well as small amounts of CO2 out. Over time this can result in oxidation of the beer and lost carbonation. Seamed cans, on the other hand, form a much better seal that can prevent these issues. Of course, it’s important to make sure that the can is purged of oxygen before being filled, and that the can lid is sealed atop foam to eliminate oxygen from the headspace. Aside from all the “sciency stuff”, cans are just plain safer. Take your beer backpacking, camping, or poolside and rest assured that broken glass won’t ruin your day!

The KegLand 8 gallon Stainless Conical Fermenter is an excellent value. Made from 304 stainless, the inner welds are robotic and very smooth. A center 1” dump valve is large enough to let you get rid of yeast and trub without clogging, while a rotating racking arm lets you drain the fermenter while avoiding any sediment that may remain. The racking arm features a 3/8” diameter hose barb outlet for attaching tubing. Handles make it easy to move and clean.

The stainless lid is silcone gasket sealed, and a thermowell with removable digital centigrade only thermometer is provided, which has a ¼” inner diameter to accept probes from all the temperature controls we sell, including the RAPT Temperature Controller. The centigrade thermometer runs on two included LR44 button batteries.

The unit is 30” tall with airlock, and the included leg extensions will increase that to 33” tall, in case you want more room at the bottom to access the angled dump valve. It is 16” wide including the handles, while the fermenter itself is 13” wide. It features interior gallon markers from 4 to 8 gallons. The dump valve itself has 1” male threads.

Automatic Step Mashing!
One of the coolest features of the BrewZilla is the ability to program the unit with up to 6 individual temperatures and durations so you can step mash precisely how you desire. Simply press the “S1-S6” button to select the stage you want to adjust, and use the temp, time and +/- buttons to program the stage. If you have less than 6 stages in your mash schedule, program the stages you want to skip with 00:00 as the time and the controller will automatically move on to the next step. When all the stages are complete, the BrewZilla will sound an alarm and hold the last set temperature.

The programmable stages can also be used to set a delayed start of up to 23 hours in advance so that you can have your water hot and ready to go when you get home from work or wake up in the morning. In order to do this, fill the unit with strike water and program the controller with two steps. Step 1 should be programmed at a temperature lower than the unheated strike water (so the elements will remain off), and the duration should be programmed for however long you want the delay. Then program Step 2 with your desired strike water temperature and a duration of 1-2 hours, giving the BrewZilla ample time to heat up and giving you a margin of error in case you hit the snooze button the morning of brew day.

Recirculating Mash with Full Depth Malt Pipe
The built-in magnetic drive pump easily recirculates wort during the mash. We recommend getting some silicone tubing to go with the recirculation arm. This allows you more control over the recirculation and you can then use the pump to transfer your wort to your fermenter. As with any mash, be sure to stir your grain very thoroughly after mashing-in so you start out with an even temperature throughout the grain bed.

Some competing models advertise their perforated malt pipes as “high flow”, but what they don’t mention is how this affects efficiency. When recirculating the mash, wort will escape through the side perforations rather than passing through the grain at the bottom-most end of the malt pipe which can lead to lower efficiency. The BrewZilla’s malt pipe is designed so that recirculating wort must pass through the entire grain bed before escaping through the false bottom and being pumped over the top of the grain bed again. If you’re worried about the flow rate, simply add a pound or two of rice hulls to your grain bill. This is especially recommended when brewing with a high level of wheat, oat, or flaked grains.

Power & Heating Control
This very capable 15amp brewery has over 3 kilowatts of power so you can get up to boil in no time. 220V outlet required! The BrewZilla has been made with ultra-low watt density elements, which means less caramelization and also makes this unit capable of producing very light beers with very little maillard effect. This is also particularly useful for high gravity beers that can get some degree of scorching in other electric breweries with higher watt density.

Triple heating elements run off of a single 220 volt plug and have individual switches allowing for more control over the heating process. The elements are 2000, 1000 and 500 watts for a combined 3500 watts! Use all three elements when you need to ramp up the temperature quickly, either to quickly get to your mash temp or to rapidly go from your mash temp to boiling. Use only one of the elements when you want to hold a desired temperature.

We highly recommend adding the optional BrewZilla Neoprene Jacket to help reduce heating times and maintain a more vigorous boil. The extra thick neoprene jacket is custom designed to insulate the entire kettle portion of the BrewZilla while staying out of the way of the ball valve and handles. The jacket can help you acheive up to 10% faster heat up times and cut heat loss from the boiler in half.

The brewery also includes a stainless steel malt pipe with false bottom allowing you to easily shift from mash tun to boil kettle during your brew day. The malt pipe includes a handle to lift it from the BrewZilla and tabs at the base so you can set the malt pipe over the system to let the wort drain out. It also has feet at its base to raise the malt pipe slightly off the base and help prevent clogging.

Whether you’re a brewery looking to offer canned beer to go or a homebrewer wanting to keep your creations fresh and fully protected from light, the Cannular is the answer. This bench top unit is one of the most compact and easy to use can seamers you’ll find. The Cannular only requires one person to operate, and each can takes roughly 5 seconds to seam. With a two-person team, one filling and one seaming, the Cannular becomes a suitable option for nano breweries doing small canning production runs.

Operation:
The beauty of the Cannular lies in how truly simple it is to operate. With only three points of operation, it only takes a few minutes to familiarize yourself with the machine. The seaming process is as follows:

Place lid atop the can and place the can on the platform
Turn the platform lever clockwise to raise the can to the seamer
Press the button to turn the machine on and begin spinning the can
Push the seaming lever away from you and hold for 1-2 seconds
Pull the seaming lever towards yourself and hold for 1-2 seconds
Press the button to turn off the machine and stop spinning the can
Turn the platform lever counterclockwise to lower the can
That’s all there is to it!

Construction:
The Cannular was designed to be compact, durable, and safe to operate in a wet environment. The platform assembly is made from 304 grade stainless steel, so no matter how messy your canning gets, there’s no need to worry about rusting or degradation. The body of the unit is made from hammered sheet metal and bolted together with stainless steel screws. Rubber feet help keep the unit from slipping and sliding while in use. Additionally, the Cannular features built-in brackets near the feet so you have the option to mount the machine to your counter or benchtop. The Cannular runs off of 24v DC power via the Anderson socket located on the back. This lower voltage was chosen specifically to make the unit as safe to use in a wet environment as possible.

Power:
As noted above, the Cannular comes with a 24v DC Anderson socket located on the back of the unit. It does not, however, include a cord and plug. When purchasing the unit, you’ll have the option of pairing it with either a power supply with 110v plug, or with a 6 ft. long cord with Anderson plug and alligator clips. The power supply is straight forward, and allows you to plug the unit into a standard 110v power socket. The alligator clips give you the option to power the unit from a battery, and can even be used with an 18v cordless power drill battery. This is certainly the most affordable option for powering the Cannular, and we’ve found that upwards of 200 cans can be seamed on a single battery charge.

Why Cans?
So why can when you can bottle? There’s no doubt that canning has become a more and more popular format for packaging beer among craft breweries over the last several years, and with good reason. Aluminum cans aren’t just more environmentally friendly than bottles, since cans require less energy to transport and recycle, they’re also much better at protecting the quality of the beer. Whereas bottles allow in light, which leads to skunking, aluminum cans offer 100% protection from UV and other wavelengths of light that are harmful to beer. There’s still great debate surrounding whether cans or bottles are better at keeping beer fresh, but if done correctly, cans are theoretically the superior option. When a crown cap is crimped onto a bottle, the lining of the cap can form an imperfect seal on the bottle, allowing small amounts of oxygen in, as well as small amounts of CO2 out. Over time this can result in oxidation of the beer and lost carbonation. Seamed cans, on the other hand, form a much better seal that can prevent these issues. Of course, it’s important to make sure that the can is purged of oxygen before being filled, and that the can lid is sealed atop foam to eliminate oxygen from the headspace. Aside from all the “sciency stuff”, cans are just plain safer. Take your beer backpacking, camping, or poolside and rest assured that broken glass won’t ruin your day!

After well over a year of evaluating, I splurged recently and got a Spike Conical (the CF5). I’ve seen quite a few others going through this debate period, so I wanted to provide a hot take to help others in their own decision making process. So far I’ve assembled and prepped it for my first brews, but haven’t actually used it yet. Most of the points here will be about equipment quality/features rather than practice.

For context; I added on the temp control bundle with heater, leg extensions, casters, extended bracing shelf, and a few other nice to haves. So some of these will cover things that aren’t part of the “core” conical package.

Five Benefits of Using Corny Kegs As Fermenters

The containers we call Ball Lock and Pin Lock Kegs come from the soda industry.  Also called Cornelius Kegs, Corny Kegs and Corney Kegs, they were originally intended to store and distribute soda pre-mix.  The big soda companies decided on different style containers for their pre-mix.  Pepsi landed on the Ball Lock style while Coke uses the Pin Lock style.

Homebrewers have since re-purposed these as homebrew beer kegs. It makes sense. These high quality stainless steel beverages that are meant for years of commercial food use. They’re also tough, can be had for cheap and are easy to move around.

What if someone said there was a pressure capable, heavy duty stainless steel fermenter that could be had for 50 bucks or so?

Great news…. kegs make great fermenters! Same high quality, stainless steel construction, toughness and easy portability, but this time used for fermentation.

But First, How Do you Convert a Keg to a Fermenter?

One issue needs to be addressed to convert kegs into fermenters… handling CO2 produced by fermentation. Kegs are generally designed to be airtight. Fermentation requires that we allow excess CO2 to escape.  I can think of three options…

  1. A blow-off tube. Remove the gas post or gas post poppet and get use tight fitting tubing to route CO2 to a container of sanitizer.
  2. Use a converted lid to add a stopper and airlock See: Cornelius Keg Fermenter Lid via Adventures in Homebrewing
  3. Use a Spunding Valvesome of the technique and tricks mentioned in this post rely on a Spunding Valve

Keg Fermenter Sizing

A five gallon keg isn’t really suitable for a primary fermenter for a 5 gallon batch.  You could use it as a secondary for a full 5 gallon batch, as a primary fermenter for smaller batches (maybe 3 to 4 gallons max) or you could split 5 gallon batches between two kegs.

There is a 6 gallon keg available that should allow you to ferment a 5 gallon batch.

10 and 15 gallon size ball locks have become readily available at relatively reasonable prices. A 10 gallon keg could easily accommodate a full 5 gallon batch (up to 7 or 8 gallons) while a 15 gallon keg should be able to easily handle a 10 gallon batch (up to 12 or 13 gallons).

Anvil Stainless Steel Bucket Fermentor

It’s well known that you don’t have to just ferment in that plastic bucket that came with your homebrew beginner’s kit. When you are ready to upgrade there are multiple material options, and varying levels of size/features. As it goes with most homebrew gear, brewers love stainless steel. So, of course you can get your fermentor in stainless steel, too.

Stainless provides a better oxygen-proof barrier than the plastic brew buckets and is easy to clean. The easy cleaning not only makes the worst job in homebrewing (brew day clean-up) slightly better, it also means you don’t have to worry about things hiding in crevices to sneak out and do funky things to your beer. Stainless is also durable and long-lasting, meaning you can look at it like a longer-term investment. Typical price tags on steel fermentors also make you consider it from a longer-term investment perspective as well.
