Lalbrew Lona Yeast for Homebrewers? for brewing low alcohol beers

LalBrew LoNa Yeast

LalBrew® LoNa™ is the first maltose-negative Saccharomyces cerevisiae strain specifically developed using hybridization for brewing clean low-alcohol and non-alcohol beers (reduced worty flavors, POF-negative and H2S-negative). Advanced classical and non-GMO breeding methods were used to select a strain that does not consume maltose or maltotriose, resulting in very low attenuation. As a S. cerevisiae strain, LalBrew® LoNa™ performs like an ale yeast producing a clean and neutral aroma profile with no phenolic flavors, and significantly reducing aldehydes that cause worty flavors. Additionally, the patented technology from the University of California Davis (USA) ensures that the strain will not produce sulfurous off-flavors, allowing the malt and hop flavors to shine through.

Pasteurization is required when brewing with LalBrew® LoNa™ to avoid refermentation after packaging and ensure beer stability.

Ends Today: 25% Off Sourvisiae Ale Yeast

Lallemand | Sourvisiae® Ale Yeast | Lactic Acid Producing Dry Beer Yeast

Lallemand | Sourvisiae® Ale Yeast | Lactic Acid Producing Dry Beer Yeast via MoreBeer

More Info

From the each product description, check product pages for current description, price and availability:

  • Sourvisiae® is a modern fermentation solution that produces sour beers through one simple fermentation step
  • Clean and neutral flavor, ideal for traditional and modern sour beer styles and an excellent base for fruited sours
  • Sourvisiae® is a bioengineered (GMO) strain of Saccharomyces cerevisiae
  • Lallemand premium brewing yeast offers brewers unmatched consistency, reliability and purity from one batch of beer to the next

Sourvisiae® is a bioengineered ale yeast strain (Saccharomyces cerevisiae) capable of producing lactic acid during fermentation to provide brewers with an easy, reproducible, and mono-culture product for sour-style beer production.

Sourvisiae® contains a single genetic modification, a lactate dehydrogenase gene from a food microorganism, which enables the yeast to produce high levels of lactic acid, the main compound that gives sour beers their flavor. Sourvisiae® allows the brewer to ferment and sour the beer in one simple step, reducing cross-contamination risks, lowering costs, cutting total process time, and allowing brewers to obtain a consistent product. The brewing process is conducted without any modifications; Sourvisiae® is pitched just like conventional yeast and ferments in a normal fermentation time. Sourvisiae® does not produce other flavor compounds associated with Brettanomyces, Lachancea, or Lactic Acid Bacteria, providing a cleaner and more reproducible souring process, with much shorter fermentation times.

Microbiological Properties
Classified as a bioengineered Saccharomyces cerevisiae, a top-fermenting yeast. Finished product is released to the market only after passing a rigorous series of tests. *According to the ASBC and EBC methods of analysis.

Typical Analysis of Sourvisiae® Yeast:

  • Percent solids 93% – 96%
  • Living Yeast Cells ≥  5 x 10 9 per gram of dry yeast
  • Wild Yeast < 1 per 10 6 yeast cells
  • Bacteria < 1 per 10 6 yeast cells

Brewing Properties
In Lallemand’s standard conditions, wort at 20°C (68°F), Sourvisiae® yeast exhibits:

  • Vigorous fermentation that can be completed in 5 days
  • Medium to High Attenuation and Medium to High Flocculation
  • Highly acidic and slightly fruity flavor and aroma

The optimal temperature range for Sourvisiae® yeast when producing traditional styles is 15°C (59°F) to 22°C (72°F).

Fermentation rate, fermentation time and degree of attenuation are dependent on inoculation density, yeast handling, fermentation temperature and nutritional quality of the wort.

Attenuation may appear lower due to the formation of lactic acid. Production of lactic acid does not result in a loss of CO2. When sugar is consumed to produce lactic acid, there is no change in density. Therefore, the amount of residual sugar in the finished beer is lower than the final density would imply.

This yeast produces a very acidic beer, with final beer pHs in the range of 3.0 and lactic acid in the range of 8 – 15g/L. Vigorous fermentation can be completed within 5 days.

The resulting flavor and aroma profile of the beer is a slightly fruity acidic beer. Because of the resulting low pH and highly acidic conditions, we do not recommend re-pitching this yeast.

Flavor and Aroma
Tangy, sour, slightly fruity

NOTE: THIS PRODUCT IS ONLY ELIGIBLE FOR SHIPMENT IN THE UNITED STATES.

7 Gallon FerMonster Wide Mouth Fermenter – on sale for $24.99, Matches 2016 Deal!, Limited Availability + Hands on Review

7 gallon wide mouth Fermonster Fermenter from MoreBeer

More Info

From the product description, check product page for current description, price and availability:

The Fermonster is a brand new fermenter designed specifically for fermentation. MoreBeer! gave product feedback for over 2 years of development and we think they nailed the design. The large lid allows for easy filling and makes hop or oak additions a breeze. The smooth sides are fantastic for sanitization – no ribs or texture to collect yeast or bacteria. The large 7 gallon size was designed to provide ample space for fermentation and you’ll find the molded in volume markers super handy for accurate filling. The punted bottom allows sediment to collect to the sides so that you can siphon liquid from the center. Because they are made from virgin PET plastic they nearly unbreakable and a lot safer than similar glass carboys. Also notice the conical top which reduces surface area if you plan to store beer or wine long term.

Made from heavy PET plastic, the same material used in 2 L soda bottles, which is nearly impermeable to oxygen penetration. Due to the thickness of the material and the overall geometry the Fermonster does not require ribs or dimples for stability. That results in a super smooth interior surface that reduces yeast and sediment buildup making it the easiest to clean, most sanitary PET carboy on the market. The huge 4″ opening makes filling a breeze, and cleanup is as easy as wiping down the inside. The 7 gallon volume is a monster of a fermenter, reducing blowoff issues seen with standard 5 and 6 gallon carboys. Fermonsters are easily moved by hand or consider using our Carboy Carrier for even greater ease of use.

These fermentors are completely air-tight and the lids sealed tight with an O-Ring. Additional O-Rings and Lids both with and without holes are available for purchase, see our You Might Also Need items below.

Features:

  • 4″ inner diameter wide mouth carboy – easy to clean!
  • Food grade PET plastic construction is nearly impermeable to oxygen penetration
  • No hard to clean dimples or ribs
  • Volume Markers at 5, 6, and 7 Gallons
  • Punted bottom
  • O-Ring and Lid with one hole is included (Fits #10 Stopper)
  • Additional O-Rings and Lids available
  • Weight: 1.5 lbs
  • Temperature Limit: 140° F
  • Height: 20.9 inches
  • Diameter: 11.3 inches
  • Completely taste and odor free
  • Perfect for Beer, Wine, Cider, Mead, Kombucha or any other fermented beverage!

Hands on Review: Kegland Hop Bong!

Updated: March 17, 2025

Thank you to HBF Contributor Aaron Nord for this hands on review!  Aaron is an advanced award winning brewer, a long time reader and a serial tipster!

Kegland Hop Bong

Keeping oxygen out of a fermenter after the initial yeast pitch is a goal of most fermentations, with a few exceptions being oxygenating a high gravity batch mid-way through fermentation, barrel-aged ales, or spontaneously fermented ales in open foeders. For a homebrewer who wants to brew a beer outside of those exceptions noted, avoiding oxygen introduction after fermentation has begun is paramount to a quality finished beer, a goal which is sometimes a difficult to attain. Notably, adding dry hops, other flavor components (e.g. wood chips or coffee beans), or clarifying agents (e.g. gelatin fining or Biofine) presents a challenge for most homebrewers if they want to avoid oxygen exposure in the fermenting wort.

There are workarounds and ways for homebrewers to limit oxygen introduction, conceived upon by crafty brewers over the years. Dry hops for example, can be suspended in a muslin bag above the wort by placing a magnet inside the bag and its mating magnet on the outside of the fermenter. In this way, the hops will be in the fermenter at the beginning of fermentation and can be dropped according to the dry hop schedule by simply removing the outside magnet, all without opening the fermenter. Or, to add clarifying agents without cracking the fermenter lid, a brewer can utilize a plastic bottle with a carbonation cap. This method entails adding the liquid substance to a plastic soda bottle and pressurizing the bottle with CO2 via the carbonation cap, purging it, and repeating the process multiple times to ensure the gas inside the bottle is mostly composed of CO2. Then, by using a ball lock jumper, the pressurized bottle can be connected to a fermenter’s ball lock post, if equipped, and the liquid will enter the fermenter, so long as the pressure in the fermenter is less than that of the bottle.

Although these workarounds exist and cut the mustard for my purposes, I was excited when I found out that Kegland was set to release a product that appeared to be a simpler solution all around. In looking into it further I found that it was advertised to have additional uses, aside from the main feature of enabling hop, flavor, or fining additions to the fermenter while limiting oxygen ingress. This highly anticipated product is called the Hop Bong.

I have been a proud owner of a Kegland FermZilla All Rounder fermenterHands on Review – for over two years now and have nothing but good things to say about it. As a manufacturer, Kegland is a homebrewing gear innovator and a leader in the market. They are continuing to come up with novel equipment and tools that span their wide array of product offerings including many for their FermZilla fermenter line. I was excited to see what the Hop Bong could offer as an addition to my All Rounder fermenter.

FermWrap Fermentation Heater – $18.99! Limited Availability, BEATS 2014 Deal! + Use it to remove keg labels

The FermWrap™ Heater | Fermentation Heater | 40 watts | 115V
FE650

FermWrap Fermentation Heater from MoreBeer

More Info

From the product description, check product page for current description, price and availability:

Keep your yeast happy and your ferment warm during those cold winter months with this flexible heater wrap! Unlike those old heater belts, the FermWrap covers a wide area of your carboy or fermentation vessel, promoting an even heat distribution (11″ tall x 25″ wide.). Using tape to adhere, the FermWrap can be attached directly to your fermenter, or can be used to heat the space in a box (or refrigerator) that the fermenter is in. Depending on your configuration and insulation, you can increase the temperature of your ferment from 5-20 degrees Fahrenheit. This differential can be increased by using our carboy bag to insulate a carboy (this has been tested). To decrease the temperature differential, stick only a portion of the FermWrap to the fermenter.

With 40 watts of heat spread over almost two square feet it provides gentle even heating. Draws 40 watts. 115V.

For more precise results, we recommend a temp controller and carboy thermowell for the ultimate in fermentation temperature control. Or for the best control, use the dual stage control and carboy thermowell, as well as a refrigerator, to control both the high and low temps.
