Oak barrels can be used to used to age stouts and porters, age other beer styles, make sour beers and more.

New oak barrels can be had in sizes ranging from 1 liter all the way up to 1 barrel/53 gallons. As with most things 5 gallons seems to be a sweet spot for a lot of brewers. Larger barrels can be good for prolific homebrewers or group brews and smaller 1 to 5 liter sizes are great if you’re wanting to give barrel aging a try without a huge amount of expense or space.

Denny’s Favorite 50 is my go-to American style yeast strain. I prefer it over US-05 and similar.  This yeast was preserved by legendary homebrewer Denny Conn (author page on Amazon).

Here’s the story behind Denny’s Favorite 50 from the source, via a post on the Homebrewer’s Association forum

OK, kids, here’s yer bedtime story…

Many years ago I decided to try my hand at yeast ranching. I bought a kit of supplies and some slants from a company by the name of Brewtek, which I later found was run by the inimitable Maribeth Raines. I picked slants at random and one was called CL-50 Cal. brewpub yeast (or something like that). I had just finished developing my Rye IPA recipe and had been using WY1272 for it. I tried the CL-50 and found that it gave the beer a wonderful silky mouthfeel which really complemented the other aspects of the beer. I started using it as my base AM. ale yeast in lieu of 1272 and 1056. I also started talking the yeast up online in the few brewing discussions that were around back then (primarily rec.crafts.brewing for you old timers). A few people started buying slants and many more wanted to see it come put in a larger, more common homebrew format. Meanwhile, back at the ranch (who doesn’t love saying that?), MB had shut down Brewtek and sold the stock to a company in CO. Don’t recall the name, but I ordered CL-50 from them a few times. I saw it going downhill every time I got some, and IIRC that store eventually sold the library to someone else. I had met and begun talking to Dave Logsdon, then owner of Wyeast, about them releasing it commercially so more people would have access to it, but Dave was reluctant as long as someone else had the strain. Some kinda BS about ethics, ya know….;) . I ordered a couple more slants from whoever had it back then just before they vanished. When Dave found out it was no longer available, we arranged for Wyeast to get a sample from my yeast bank. They went back and forth on what to call it (I suggested “Noti Ale yeast”) and finally informed me it was going to be called “Denny’s Favorite 50”. Since I make largely Am. style beers, it’s still my go to yeast for almost all of them. It makes a great BVIP and I really like it in my Noti Brown Ale recipe also (Am. brown ale).

So there you have it. I feel like I’m a really lucky guy to have had such great honors as a homebrewer….the yeast, the GC, the great friends I’ve made.

I’ve seen a number of similar attachments used by homebrewers (for aeration) and winemakers (for de-gassing). The thing I haven’t found until now is a stainless steel food grade model.  Most are designed for mixing paint, not beer. This one is food grade. Check product page for current specifications.

Finding Wyeast 1764 Rogue Pacman Yeast – sources and substitutions

Rogue’s “Pacman” Yeast Strain is available to homebrewers via Wyeast 1764. This was a VSS (very special strain) limited release that happened back in 2006.

Pitching/Fermentation : John Maier (Rogue Brewmaster) says it loves a 60 degree ferment. Pacman is alcohol tolerant, flocculent, attenuates well and will produce beers with little to no diacetyl.

Notes : Very mild fruit complements a dry, mineral finish making this a fairly neutral strain. Pacman’s flavor profile and performance makes it a great choice for use in many different beer styles.

Pacman strain to be released by Wyeast
June 22nd, 2006

Wyeast Laboratories, Inc. announces its new VSS (Very Special Strains) program for Homebrew Retailers. Special, new and rare strains of yeast will be made available to homebrewers.

Odell, Oregon — June 21, 2006 — Wyeast Laboratories has begun a new program for the promotion of its ACTIVATORTM Pure Pitchable Yeast packages sold by online suppliers and in homebrew retail shops around the world. The “VSS” program will feature Very Special Strains of beer, wine and distiller’s yeast, otherwise unavailable to homebrewers.

The VSS promotions will run quarterly. The inaugural selection of yeast strains currently being featured, are being made available June 1 through August 31. On this listing are three strains that were previously discontinued from Wyeast’s regular lineup of strains: Wyeast 3763 Roeselare, Wyeast 3725 Biere de Garde, and Wyeast 4366 Distillers M-Strain. The second VSS promotion has a big surprise in its product mix: Wyeast Laboratories Marketing and Sales Manager Jon Graber reports that Rogue Ales has agreed to release its coveted “PacMan” Ale Yeast to homebrewers.

We’re very appreciative of the generosity of spirit displayed by John Maier at Rogue Ales for allowing the release of PacMan to homebrewers” says Graber. “We hope to have more proprietary strains on future VSS promotions, but this is the one most requested by our homebrewing customers over the past 15 years, so we’re very excited that it is the first to be released in this way.” This second promotion will run four months from September 1 until December 31. Additional strains will include Wyeast 3864 Canadian/Belgian ale yeast and one more, as yet undetermined.

Marketing for the VSS program will consist of 8½ by 5½ inch postcards listing the strains available and their fermentation profiles; plus other information useful to home brewers. Additional marketing support will come from Wyeast’s new website, due to go on-line by midsummer. Strains to be included on each quarterly promotion will be announced one month in advance, to keep up suspense and build anticipation, and also to keep options open to Wyeast when new strains are obtained.

Imperial Joystick A07 was said to be the Pacman strain but that has been discontinued. RVA Yeast Labs 103 is also said to be the Pacman strain.

Hands on Review: Torpedo 10 Gallon Ball Lock Homebrew Kegs + Limited Time DEAL on Used 15 Gallon Kegs!

Larger 10 and 15 gallon homebrew kegs have been very hard to find… for years.  There have been a couple sources, eBay was a best bet, but that was touch and go at best.  When you could find one, prices were… outrageous.  $300++ for a used 10 gallon keg would not be uncommon.  Again, that’s IF you could find one.

Great news homebrewers…. MoreBeer has introduced 10 and 15 gallon homebrew ball lock kegs via their Torpedo line of kegs and accessories.  These are BRAND NEW kegs that are (hopefully) readily available at a reasonable price.

Why a larger 10 or 15 gallon homebrew keg?

The first and most obvious answer is for large batch brewers.  If you brew 10 or 15 gallon batches, it sure would be nice to have a keg that fits your entire batch.  Even if you don’t brew 10 gallons, you may want to brew a couple 5 gallon batches of the same beer (much like professional brewers do) and keg it in a single keg.

A less obvious answer to the question is… to use as a fermenter.  Kegs are well-built stainless steel vessels that are pressure capable.  You can easily move them around and they are built to be bumped around a bit.  Using a keg opens up some really interesting possibilities…. fermenting under pressure with a Spunding Valve [See: Build a Spunding Valve! – How and Why], naturally carbonating in the fermenter/Krausening (again with the aid of a Spunding Valve), transferring under pressure, oxygen-free (or near oxygen-free) transfers, re-purposing expelled CO2 and more.

A third application is similar to the second… Use as a UniVessel.  Ferment and serve in the same vessel.  Save time and simplify your process.

These kegs are used but in excellent condition. I have a good number of these but when they are gone they are gone and tough to find. They have only been rinsed and examined during refurbishing so Corny Keg recommends that you clean and sanitize before use. For comparison the other 15 gallon keg offering they have is selling for a whopping… $735.95. Generally speaking, I would say that’s market price. These older 15 gallon Cornelius kegs are hard to find. Granted this isn’t an apples to apples comparison, but the idea is sold. $135 is a stellar deal.

Sourvisiae® is a bioengineered ale yeast strain (Saccharomyces cerevisiae) capable of producing lactic acid during fermentation to provide brewers with an easy, reproducible, and mono-culture product for sour-style beer production.

Sourvisiae® contains a single genetic modification, a lactate dehydrogenase gene from a food microorganism, which enables the yeast to produce high levels of lactic acid, the main compound that gives sour beers their flavor. Sourvisiae® allows the brewer to ferment and sour the beer in one simple step, reducing cross-contamination risks, lowering costs, cutting total process time, and allowing brewers to obtain a consistent product. The brewing process is conducted without any modifications; Sourvisiae® is pitched just like conventional yeast and ferments in a normal fermentation time. Sourvisiae® does not produce other flavor compounds associated with Brettanomyces, Lachancea, or Lactic Acid Bacteria, providing a cleaner and more reproducible souring process, with much shorter fermentation times.

Microbiological Properties
Classified as a bioengineered Saccharomyces cerevisiae, a top-fermenting yeast. Finished product is released to the market only after passing a rigorous series of tests. *According to the ASBC and EBC methods of analysis.

Typical Analysis of Sourvisiae® Yeast:

  • Percent solids 93% – 96%
  • Living Yeast Cells ≥  5 x 10 9 per gram of dry yeast
  • Wild Yeast < 1 per 10 6 yeast cells
  • Bacteria < 1 per 10 6 yeast cells

Brewing Properties
In Lallemand’s standard conditions, wort at 20°C (68°F), Sourvisiae® yeast exhibits:

  • Vigorous fermentation that can be completed in 5 days
  • Medium to High Attenuation and Medium to High Flocculation
  • Highly acidic and slightly fruity flavor and aroma

The optimal temperature range for Sourvisiae® yeast when producing traditional styles is 15°C (59°F) to 22°C (72°F).

Fermentation rate, fermentation time and degree of attenuation are dependent on inoculation density, yeast handling, fermentation temperature and nutritional quality of the wort.

Attenuation may appear lower due to the formation of lactic acid. Production of lactic acid does not result in a loss of CO2. When sugar is consumed to produce lactic acid, there is no change in density. Therefore, the amount of residual sugar in the finished beer is lower than the final density would imply.

This yeast produces a very acidic beer, with final beer pHs in the range of 3.0 and lactic acid in the range of 8 – 15g/L. Vigorous fermentation can be completed within 5 days.

The resulting flavor and aroma profile of the beer is a slightly fruity acidic beer. Because of the resulting low pH and highly acidic conditions, we do not recommend re-pitching this yeast.

These Erlenmeyer flasks help the best brewers to make large yeast starters to get their beer fermenting fast. Large populations of active yeast help ensure a healthy fermentation, free of off flavors.  One of our favorite things about the Erlenmeyer flasks is that you can boil your starters directly in them!

Our large 2000ml Erlenmyer Flask is the ideal vessel to make a large yeast starter for 5 gallon lagers and high gravity brews. Because it is made from borosilicate glass you can move it from a boil on your gas stove into a cold water bath for cooling, without the risk of cracking. (We do not recommend the use of an electric element. If this cannot be avoided, we recommend using a larger pot as a hot water bath on the stove.) This means you can do the whole process in one container, keeping it simple and helping to reduce the risk of contamination when transferring from one container to another.

Recommended Process for Use of Flask:
Double Boiler Method

It is important for your safety to heat water in the flask with a heat source that distributes heat evenly. Our manufacturer has confirmed that direct heat to the glass can break down its integrity and break if the heat source doesn’t distribute evenly.

Morebeer! recommends using the “double boiler method.”  This process involves using a boiling water bath on the outside of the flask to heat up the water inside the flask.  All you need is a kettle 3 gallons or larger.  This process is much safer and efficient. If the flask should break or boil over, your kettle will be there to collect the contents, thus keeping your stove clean and keeping you away from potential harm.

Why make a yeast starter? (from our FAQ)
We build starters for 3 main reasons. First, to ensure yeast health. By making a starter 1-3 days in advance, you ensure that your yeast is healthy and strong and ready to do its job. Second, to create more yeast. By making the starter you will increase the cell count of the yeast, giving you a better chance of keeping bacteria’s and wild yeasts from fermenting your wort. Third, if you are making high gravity beers. If you are making a high gravity beer (1.060+) you will need more yeast to start the ferment faster. High gravity beers will also finish more completely when you pitch ample quantities of yeast.

In the lab world, these flasks are known as “Student Grade”. A great flask for making yeast starters!(Student grade is not the highest grade flasks and will have minor defects)

Inkbird’s ITC-308 Digital Dual Stage Temperature Controller is a dual stage, pre-wired Digital Temperature Controller

The ITC-308 comes in the original version as well as an updated Wi-Fi enabled model.  This review covers both editions of this controller.

Why a Temp Controller?

Temperature controllers, sometimes referred to as over-riding thermostats, can control devices like refrigerators, freezers and fermentation heating devices to provide a consistent temperature for your kegerator, fermentation chamber or brew system. They do this by monitoring the temperature and cycling on and off the device in question. Generally, you will set the device to full cooling or heating power and the temperature controller takes over from there.

I use a similar sort of gauge gauge (different specs, manufacturer and model) in my Spunding Valve Build.   A Spunding Valve allows you to ferment under pressure, naturally and precisely carbonate in the keg, fix over-carbonated beers and more.

In my opinion the original ITC-308 was and is a game changer as far as homebrew temp controllers.  In comparison to available controllers available at the time the ITC-308 was released, it offered loads more features, including dual stage control, for a fraction of the price.  Game changer!  The addition of Wi-Fi control and monitoring to this great controller has made a great temp controller even better.  Check out our Hands on Review of the ITC-308.  That includes a section on the WiFi version.
