Hands on Review: Viking Malt Xtra Pale Base Malt

Viking Xtra Pale Malt in a Vittles Vault Container – Hands on Review

This review is by Homebrew Finds Contributor Brad Probert.  Brad is an engineer, expert homebrewer and experienced reviewer.  Grab a link to Brad’s website at the end of this review.

Viking Xtra Pale Malt

When we say “malt”, most of the time we are referring to “malted barley”. The barley is grown and harvested as a grain, and then the malt house does the fancy processing of coaxing that grain to get it ready to sprout, and then heating it to stop that sprouting process. Both of these things (the grain and the processing by the maltster) are what give us the different colors and flavors in our beers. The temperature and length of time the barley is heated is the biggest variable affecting the color of the wort you end up making from it.

35% Off Grain at Label Peelers!

Label Peelers is discounting their lineup of grain offerings, including malted barley, corn, oats, rye, wheat and more.  Malsters include Briess, Avangard, Dingemans, Muntons and more.  Offerings include base and specialty grains and apply to both bulk 50 and 55 lb bag purchases and smaller 1 and 10 lb offerings.

  • The 35% discount should be reflected on each product page
  • No coupon or discount code is required.
  • Shipping is an additional cost based on your location.  Because of minimum shipping costs, it may make sense to place a larger order.  Additional items may ship for minimal cost.  Example: Shipping (for me) for 1 lb of Citra is $8.93.  2 lbs cost $9.18 to ship.  That second pound costs just 25 cents to ship.  That’s minimum shipping at work.

More About Stone Path

From the company’s about page:

Who We Are
We are a North American craft malt company operating in New England, USA. Using world-class malting technology, and in partnership with Germany’s leading malt supplier, we locally craft and supply premium malt that enables craft brewers to create unique and distinctive beer.

We build strong relationships with craft brewers, providing excellent service to their breweries and then proudly serve their creations in our malt house taproom. Our passion is supporting craft brewers.

Why a Stone Path?
Centuries ago, ancient civilizations traveled on stone paths that guided them on their journeys and took them to their lofty destinations. Paths that previously brought uncertainty and hardship were paved with stone to enable a certain and reliable journey. Stone Path Malt provides craft malt products with the quality, consistency and supply capacity that are required for every brewer’s journey.

Whether your brewing journey is creating a new seasonal beer or crafting a year-round favorite, Stone Path Malt enables a certain and reliable path to the color, flavor, and aroma that uniquely defines your beer and keeps your customers coming back for more.

Setting Out on the Path
The journey began in the fall of 2014 with a phone call to a friend that led to a late-night in Boston’s South End… a lot of things begin that way! The idea was to help elevate the local craft brewing community with a unique and differentiating malt product and experience. And so, with a passion for craft beer and local New England traditions, Stone Path Malt was founded. The founders, Mike Schroth and Mark St. Jean, grew up in Central Massachusetts. Because of this, they chose to locate the company in New England, where their passion, experience, and commitment to service would pave the path for the future of local craft malting.

Finding the Right Partners
To launch Stone Path Malt, the founders traveled to Germany in early 2015 to explore a newly developed prototype state-of-the-art malting system. While in the region to explore the innovative system, they met with a 5th generation craft maltster operating a malthouse in the Franconian region of Germany. Their shared vision established the first partnership of Stone Path Malt.

To produce the highest quality malt we partnered with Kaspar Schulz, the 10th generation and world-renowned German brewing and malting equipment manufacturer serving malt houses since 1677. The latest Kaspar Schulz Malting System combines both tradition and innovation at the highest level.

The system now in operation at Stone Path Malt is one of six Kaspar Schulz Malting Systems installed in the world. Today, it is meticulously operated by their North American and European trained maltster. To learn more about our innovative malting system, visit our process technology page.

To complement their locally crafted malt products and strengthen our malting expertise, Stone Path Malt formed a second important partnership with IREKS, a leading malt company headquartered in Kulmbach, Germany. IREKS has been a world renowned and original producer of Bavarian base and specialty malts since 1856. As a strong partner for its brewing customers, some of the most notable breweries in Germany, Europe and across the world choose IREKS for their malt.

Through these important partnerships, Stone Path Malt is able to combine traditional malting methods with innovative process technology to produce the highest quality locally crafted malt. for locally crafted beer. The best craft beer deserves the best craft malt.

Better Malt. Better Beer.

Hands on Review: Monster Mill MM-3 Grain Mill!

Updated: 5/14/2024

This review is by Homebrew Finds Contributor Brad Probert.  Brad is an engineer, expert homebrewer and experienced reviewer.  Grab a link to Brad’s website at the end of this review.

Monster Mill MM-3

I started milling my own grains not too long after I switched to all-grain. At first I thought the idea was laughable to mill my own grains- why buy something and do the work myself, when I could get it done for free at the homebrew shop? But once my process had stabilized a fair amount, I became frustrated by my inability to hit the recipe’s planned OG. On my batches where my gravity was lower than predicted, I found a notable number of fully intact grains in the spent grains from my mash. Aiming for consistency, I wanted to make sure all my grains were always crushed, so I bought a 2-roller grain mill. That worked well, but if I wanted to optimize mash efficiency, I was always dancing on the edge of a stuck mash.

adyeast

The 3-roller mill from Monster Brewing Hardware passes through a first pair of rollers that have a fixed gap. That is machined to be 0.060”, with the intention of doing a minimal crush to soften the inside of the grain without really breaking the husk. After the first pair of rollers, it passes through the gap that you can adjust to your liking. The instructions provided with the mill recommend 0.045” for a medium crush, 0.055” for a coarse crush, and 0.038” for a fine crush. But of course the beauty of having your own mill is you can adjust it as you want, based on what works best for you.

The MM-3 3-roller mill comes with some options. The base rollers are 1144 steel alloy that is durable for long life, but can get some surface rust if used in a non-climate-controlled area, or if you wet mill your grain. For those homebrewers, they offer a stainless steel roller option, which they say has the same durability as the steel alloy base rollers. If you are a manic homebrewer, they offer a 3rd option with their MM-3 Pro series, which has heat treated rollers. These apparently have about 10x the life durability, but the price tag roughly doubles over the base MM-3.

The other option to choose from is the drive shaft size. Standard is a 1/2″ drive, but 3/8” is available as a smaller option. The 3/8” really isn’t recommended since 3/8” drive drills typically don’t have the torque to drive this mill. It can also be hard to find a cordless drill with enough torque to drive it, so Monster Mill recommends a corded drill. If you order the grain hopper from Monster Mill, it comes standard in galvanized 20-gauge steel, or optional stainless steel. Galvanized steel is corrosion resistant, so the only real advantage of stainless for your grain hopper is the “bling effect”.

Custom Grain Bills – Order Exactly What you Want – simplify brew day with fractional quantities

From Great Fermentations:

EXACTLY WHAT YOU NEED & HOW YOU NEED IT!

Great Fermentations is proud to give you the ability to order custom grain/malt bills, prepared exactly how you want them! Our website allows you to add individual grains to a specific “Grain Bill” which tells us if you want the grains mixed together or not. You can also tell us if you want them separate from other grains, as well as whether or not they should be crushed. Lastly, we also give you the ability to order individual grains in fractional increments; no need to buy a full pound of something you only need a quarter pound of! We do this all for free as well, with no additional charges to you because we know getting exactly what you need is important for your brew day.

GRAIN BILLS & CRUSH OPTIONS

Each grain we sell on the website, comes with a couple of drop down boxes that allow you to choose if you want the grain crushed or not, and which grain bill to add the specific grain to. The Crush Grains option is pretty self-explanatory; select either Yes or No for whether or not you want your grains crushed.

For the Grain Bill option, this is how you tell us how to mix this particular grain with any of the other grain you are purchasing. Have a recipe that calls for some 2-Row and some Crystal 60, and you’d like them both put in one bag together? Then simply choose the Grain Bill 1 option when adding them to the cart. The site gives you the ability to create up to 15 different grain bills. You also have the option of keeping the grains separate by simply selecting that option.

FRACTIONAL QUANTITIES

This feature is probably the one we are most happy with on our site, and that is the ability to order grains in increments LESS than a pound. Most other stores only allow you to order in increments of a pound, so that you are often left with extra grain that you don’t need and it goes to waste. Not with us though 🙂

Each grain we sell on the website allows you to input decimal numbers in the quantity field to specify the exact amount of grain you want; no more and no less. Grain quantities are in pounds so enter the decimal amount you need in pounds. Need just a quarter pound of chocolate malt? Then simply put 0.25 in the quantity field (1/4 is a quarter, and equals 0.25). The same goes for larger amounts as well. Need 10 1/2 lbs of 2-Row? Then simply put 10.5 in the quantity field.

NOTE: We can only be accurate up to the hundredth decimal (0.XX). Also for users of software programs like BeerSmith, many of the sub-pound increments are represented as ounces (oz) by default, so make sure to translate those to pounds! If the recipe software calls for 4 oz, that is 1/4 lb. so add 0.25 to the cart. As a reference, there are 16 oz in a lb.

  • Bulk grain deals are hard to come by: It’s tough to find deals on full sacks of grain.  The per lb price on full sacks of grain is usually pretty great.  The downside is online sellers generally do not ship this for free or for a flat rate.  You still may do okay paying calculated shipping, but many times the shipping costs negate and per lb savings.
  • Save $30 at MoreBeer!  – remember promo code EZ30
  • MoreBeer has 10 lbs of Briess 2 Row for $10.69.  That is the largest size that still qualifies for free shipping to addresses in the contiguous US.  If you buy 17 x 10 lbs, you’re total would be $181.73.  Coupon code EZ30 will make it $151.73. This figures to about 89 cents per lb and equates to about $44.62 per 50 lb bag and you still get free shipping.  You can easily mix and match and pick up multiple malt varieties in 10 lb increments and come about close to the same.
  • Yes, free shipping does work.  Bags of grain do not qualify for free shipping from MoreBeer.  However… 10 lb bags do.  If you get in on this deal you will get 17 x 10 lb bags of grain,

Juno Choi With a PIle of Hops

One of the homebrews that stood out to me while attending a past Homebrewer’s Conference, homebrewcon in Grand Rapids, Michigan was an IPA that was served by Brewer’s Supply Group (BSG) at their booth at the Conference. It was… delicious.  Roasty, great hop character and easy to drink.  I swung by for two samples and shortly returned… for a third and it was gone.  After the conference, I got a hold of BSG to ask about the beer.  I learned that it was formulated and brewed by Juno Choi.  Juno kindly shared the recipe with me and I’d like to share it with you.  Thank you Juno!

The recipe features 100% Patagonia Malts from Chile.  Those were new to me and I think relatively new to the homebrew market here in the US, because… I had a very difficult time sourcing the grain for this recipe.  After looking around a bit, I contacted Bryan at Great Fermentations.  They already carried Patagonia, just not not all three varieties that this recipe calls for.  Bryan kindly sourced the remaining grains and has stocked them at Great Fermentations.  Thank you Bryan!

Viking 2-Row Xtra Pale Malt, 10 lbs – $7.79… 78 cents/lb + free ship eligible, limited availability

Viking 2-Row Xtra Pale Malt via MoreBeer

More Info

From the product description, check product page for current description, price and availability:

Xtra Pale is a modern 2-row base malt designed for very light-colored ales. While it works great as the base malt for any ale, it is particularly perfect for today’s extra light colored pale ales and IPAs.

Xtra pale is germinated like a pale malt to have a high degree of modification for easy brew house conversion. However, it is then uniquely Kilned like a pilsner malt for a very light color in the 1.7 to 1.9 Lovibond range. The result is a malt that easily and quickly converts like a true pale ale malt, but is as light or lighter than most Pilsner malts.

Morebeer! Pro worked with Viking to design this malt based on numerous customer requests. Unique light-colored barley varietals were chosen and the germination and kilning processes were selected to get the best of both worlds. Compared to other 2-row base malts on the market that were originally designed for big breweries, and are neither true Pilsner or true Pale Malts, Xtra Pale was specifically designed for light, craft-brewed ales.

Malt Specification:

Moisture % – max. 4.5
Extract fine % dm – min. 81.3
Color °L – 1.7 – 3.5
Protein % dm – max. 10.1
Kolbach Index % – 44.4
Beta-glucan in wort (mg/l) – 185
