Hands on Review: Kegland Hop Bong

Kegland Hop Bong

Keeping oxygen out of a fermenter after the initial yeast pitch is a goal of most fermentations, with a few exceptions being oxygenating a high gravity batch mid-way through fermentation, barrel-aged ales, or spontaneously fermented ales in open foeders. For a homebrewer who wants to brew a beer outside of those exceptions noted, avoiding oxygen introduction after fermentation has begun is paramount to a quality finished beer, a goal which is sometimes a difficult to attain. Notably, adding dry hops, other flavor components (e.g. wood chips or coffee beans), or clarifying agents (e.g. gelatin fining or Biofine) presents a challenge for most homebrewers if they want to avoid oxygen exposure in the fermenting wort.

There are workarounds and ways for homebrewers to limit oxygen introduction, conceived upon by crafty brewers over the years. Dry hops for example, can be suspended in a muslin bag above the wort by placing a magnet inside the bag and its mating magnet on the outside of the fermenter. In this way, the hops will be in the fermenter at the beginning of fermentation and can be dropped according to the dry hop schedule by simply removing the outside magnet, all without opening the fermenter. Or, to add clarifying agents without cracking the fermenter lid, a brewer can utilize a plastic bottle with a carbonation cap. This method entails adding the liquid substance to a plastic soda bottle and pressurizing the bottle with CO2 via the carbonation cap, purging it, and repeating the process multiple times to ensure the gas inside the bottle is mostly composed of CO2. Then, by using a ball lock jumper, the pressurized bottle can be connected to a fermenter’s ball lock post, if equipped, and the liquid will enter the fermenter, so long as the pressure in the fermenter is less than that of the bottle.

Although these workarounds exist and cut the mustard for my purposes, I was excited when I found out that Kegland was set to release a product that appeared to be a simpler solution all around. In looking into it further I found that it was advertised to have additional uses, aside from the main feature of enabling hop, flavor, or fining additions to the fermenter while limiting oxygen ingress. This highly anticipated product is called the Hop Bong.

Dosage:
Two sachets are enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2.5–4 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.

Direct Pitch or Rehydrate:
BAJA yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 50-57°F (10-14°C).

K.1 Voss

More Info

Voss multi-strain comes from Sigmund Gjernes in Voss. The flavor and aroma primarily stem from orange, tangerine, and citrus. Secondary flavors include tropical fruit and mild spiciness. Voss ferments well between 15–40°C and will ferment faster at higher temperatures. At an optimal temperature of 31–35°C, you can expect fermentation to take up to 72 hours. Voss is well-suited for farmhouse ales, IPAs, pale ales, and sours.

The Voss kveik comes from Sigmund Gjernes in Voss, Norway. Voss is situated south of the Jostedal glacier. Voss was somewhat isolated from the larger cities, and most people were farming and self-sustained. People shared kveik mainly with each other, and because of the distance to other settlements, the kveik was rarely mixed with other types. The Voss kveik is unique in taste and aroma, much because of the great work done by Sigmund and others to preserve the yeast throughout the years.

Primary flavors: Orange, tangerine and citrus
Secondary flavors: Tropical fruit and mild spiciness
The intensity is medium at high fermentation temperatures, and at lower temperatures, it will be less intense.

Voss ferments well from 15°C/ 59°F and up to 40°C/ 104°F. The higher fermentation temperature, the faster fermentation. At the optimum temperature (31-35°C) expect fermentation to finish in 72 hours. When fermentation is done at low temperatures you can expect fermentation time to increase. For high gravity beers, we recommend users to pitch two packs of yeast and add yeast nutrition to ensure a healthy fermentation.

Pitch directly into wort by sprinkling it across the surface, or rehydrate yeast. For fermentation below 18°C/ 64°F, or high gravity, increase pitching rate to 60 g/HL.

Available in homebrew sachets (7 gram/0.25 oz per 20-30L/ 5-8 US gallons of wort) and brewery pouches (300 gram/10.5 oz per 1000 liter/264 US gallons of wort.

 

K.9 Ebbegarden

Ebbegarden multi-strain originates from Ebbegarden farm in Stordal. The flavor and aroma primarily come from apple and pear, with secondary notes of tropical fruit and citrus. Ebbegarden ferments well between 15–38°C and will ferment faster at higher temperatures. At an optimal temperature of 31–35°C, you can expect fermentation to take up to 72 hours. Ebbegarden is perfect for IPAs.

Ebbegarden kveik comes from Ebbegarden farm in Stordal, Norway. Ebbegarden has traditionally produced fruit, which is believed to be the source of the fruitiness in their kveik. During the Viking age, the mild climate made many Vikings settle down to fish and farm the land in Stordalen, and the first church was built in the 1100s. Beer and spirits were a big part of celebrations and gatherings for birth, confirmations and burials, and people made their own beer with kveik, especially for these gatherings.

Primary flavors: Apple and pear
Secondary flavors: Tropical fruit and citrus

Eitrheim multi-strain comes from Reidar Eitrheim in Tokheim. The flavor and aroma primarily derive from apricot and peach, with secondary notes of orange and pineapple. Eitrheim ferments well between 15–38°C and will ferment faster at higher temperatures. At an optimal temperature of 31–35°C, you can expect fermentation to take up to 72 hours. Eitrheim is suitable for IPAs, pale ales, and NEIPAs.

The Eitrheim kveik comes from Reidar Eitrheim from Tokheim, Norway. Tokheim is located close to Odda in the heart of the Hardangerfjord and next to the Folgefonna National Park. The yeast has been passed on for generations, and Reidar got it from his grandfather. The yeast is very versatile and can be used in different beer types such as IPA, Pale Ale, NEIPA, Stouts, and Porters.

Primary flavors: Apricot and peach
Secondary flavors: Orange and pineapple
The intensity is medium at high fermentation temperatures, and at lower temperatures, it will be less intense.

Eitrheim ferments well from 15°C/ 59°F and up to 38°C/ 100°F. The higher fermentation temperature, the faster fermentation. At the

Stalljen multi-strain originates from Stig Seljeset in Hornindal. The flavor and aroma primarily come from tropical fruit, mango, and pineapple, with secondary notes of orange and lemon. Stalljen ferments well between 12–38°C and will ferment faster at higher temperatures. At an optimal temperature of 31–35°C, you can expect fermentation to take up to 72 hours. Stalljen is highly versatile and works well for pseudo-lagers and IPAs.

The Stalljen kveik comes from Stig Seljeset in Hornindal, Norway. Hornindal is situated north of the Jostedal glacier. Historically, the main industry in Hornindal was farming and scythe forging. The Seljeset farm was a traditional self-sustained farm holding animals. The Stalljen name means stable, and comes from their old horse stable which now holds a private pub and brewery.

Primary flavors: Tropical fruit, mango and pineapple
Secondary flavors: Orange and lemon
The intensity is medium at high fermentation temperatures, and at lower temperatures, it will be less intense.

Stalljen ferments well from 12°C/ 38°F and up to 54°C/ 100°F. The higher fermentation temperature, the faster fermentation. Sourvisiae® is a bioengineered ale yeast strain (Saccharomyces cerevisiae) capable of producing lactic acid during fermentation to provide brewers with an easy, reproducible, and mono-culture product for sour-style beer production.

Sourvisiae® contains a single genetic modification, a lactate dehydrogenase gene from a food microorganism, which enables the yeast to produce high levels of lactic acid, the main compound that gives sour beers their flavor. Sourvisiae® allows the brewer to ferment and sour the beer in one simple step, reducing cross-contamination risks, lowering costs, cutting total process time, and allowing brewers to obtain a consistent product. The brewing process is conducted without any modifications; Sourvisiae® is pitched just like conventional yeast and ferments in a normal fermentation time. Sourvisiae® does not produce other flavor compounds associated with Brettanomyces, Lachancea, or Lactic Acid Bacteria, providing a cleaner and more reproducible souring process, with much shorter fermentation times.

Microbiological Properties
Classified as a bioengineered Saccharomyces cerevisiae, a top-fermenting yeast. Finished product is released to the market only after passing a rigorous series of tests. *According to the ASBC and EBC methods of analysis.

Typical Analysis of Sourvisiae® Yeast:

  • Percent solids 93% – 96%
  • Living Yeast Cells ≥  5 x 10 9 per gram of dry yeast
  • Wild Yeast < 1 per 10 6 yeast cells
  • Bacteria < 1 per 10 6 yeast cells

Brewing Properties
In Lallemand’s standard conditions, wort at 20°C (68°F), Sourvisiae® yeast exhibits:

  • Vigorous fermentation that can be completed in 5 days
  • Medium to High Attenuation and Medium to High Flocculation
  • Highly acidic and slightly fruity flavor and aroma

The optimal temperature range for Sourvisiae® yeast when producing traditional styles is 15°C (59°F) to 22°C (72°F).

Fermentation rate, fermentation time and degree of attenuation are dependent on inoculation density, yeast handling, fermentation temperature and nutritional quality of the wort.

Attenuation may appear lower due to the formation of lactic acid. Production of lactic acid does not result in a loss of CO2. When sugar is consumed to produce lactic acid, there is no change in density. Therefore, the amount of residual sugar in the finished beer is lower than the final density would imply.

This yeast produces a very acidic beer, with final beer pHs in the range of 3.0 and lactic acid in the range of 8 – 15g/L. Vigorous fermentation can be completed within 5 days.

The resulting flavor and aroma profile of the beer is a slightly fruity acidic beer. Because of the resulting low pH and highly acidic conditions, we do not recommend re-pitching this yeast.

For homebrewer’s… Vacuum sealed Mylar bags are an excellent  way to store hops and other oxygen sensitive materials.  As a testament to this, many hop distributors distribute hops in Mylar bags.  Sometimes those are vacuum sealed and sometimes they are nitrogen flushed.

Do Mylar Bags Work with FoodSaver Vacuum Sealers?

A FoodSaver (or similar) is a standard home suction type vacuum sealer that relies on special bags. We generally call them… vacuum sealer bags. These bags are embossed or textured to create channels on the inside of the bag. Those channels allow a FoodSaver to draw out air and create a vacuum all while the machine is clamped down. When this process is done a heat strip seals the bag locking in the vacuum state.

Mylar bags have smooth walls. Since they don’t have the required special channels they will not work with FoodSaver machines.
