TDS meters can are helpful for brewing if you’re using a RO filter or if you purchase RO (reverse osmosis) water for brewing. If you’re using an RO filter a TDS meter tells you how effective your filter is and can help you know if your filters need to be replaced. If you buy RO water, a TDS meter can let you know what you’re getting as some water processors add minerals back for flavor. A TDS meter will allow you to make sure you’re getting what you want.

Tare Function: Tare allows you to subtract the weight of the container you’re using to get a true weight of the contents. Add your empty container to the scale and press the tare button. This zeros out the scale. Now add the thing you’re weighing and the scale displays just the weight of the contents of your container. In my opinion the tare function is essential for any good homebrewing scale.

What I like about this scale… I like the high resolution. I also like that it has the requisite (in my opinion) tare features and that it uses easy to source AAA batteries [Search AmazonBasics Batteries]. Given the specs of this scale, it should work for weighing hops, water salts, smaller amounts of specialty grains (500 grams is about 7.05) and other brewing ingredients.

Palmer’s Brewing Water Adjustment App for iOS – FREE!

The purpose of this application is to help the brewer calculate salt and acid additions to create different brewing waters suitable for particular beer styles. The mineral salts in the water are the seasoning for the beer, and their chemistry sets the stage for the pH of the mash, wort, and beer.

The water chemistry affects the beer flavor in two main ways: seasoning and pH. The water mineral profile affects the flavor balance of the beer (hoppy, balanced, or malty) and also the pH of the beer, and the pH affects how the beer’s flavors are expressed to the palate. Lower pH makes the beer flavors brighter, and more attenuated. Higher pH makes the beer flavors softer and rounder.

Suggested mineral profiles are provided for most of the common beer styles. The profiles consist of ranges for calcium, magnesium, total alkalinity as calcium carbonate, sulfate, chloride, sodium, and residual alkalinity. The suggested profiles should combine with the typical grain bill for the style to create a mash pH within the desired range (5.2-5.8 @ 20°C) for good proteolysis and starch conversion. Adjusting the mash pH within that range is a brewer’s best tool for controlling the wort pH, and eventual beer pH, for the best beer flavor for that recipe. It all starts with the minerals and residual alkalinity of the water.

Source water profiles can be saved for future use.

Acid additions to reduce alkalinity and pH are also calculated.
Steps 1-7 assume the entire volume of mash and sparge water is being treated together. Step 8 is for separate sparge water acidification if that water is being treated separately, without salt additions.

Sensafe Smart Brew iDip Water Test Kit

One of the first all-grain brewing books I bought when I moved from extract to all-grain left an impression on me of the importance of your brewing water when doing all-grain mashes. To make it easy to hit my target profile I bought distilled water from the store and then added the appropriate brewing salts to it. That worked well for several years until I got tired of buying and hauling water around and decided to use city water run through some carbon filters.

My filtered water on its own tasted good, but the beer made from it had lost its pizzazz. I knew that to gain it back I needed to figure out my base water and then add the appropriate minerals to hit the target water profile like I used to target when working from distilled water. Knowing my target profile was useless to me if I didn’t know what I was starting from.

Sensafe makes water test kits targeted to the beer brewer. There is a Smart Brew Starter Kit that contains their iDip digital tester, and test strips for different measurable aspects of your water important to brewing. Once you install the free App on your Android or Apple device, you’ll see you only have access to pH, Chlorine, and Total Alkalinity. To actually use all of the 6 different test strips provided in the kit, you need to pay an additional $18.99 through the App to unlock the full set of beer-centric tests.

Through use of the 6 different test strips (25 strips of each type), and some calculations performed in the App, you are able to get the following readings on your water from the Starter Kit: Total Alkalinity, Calcium, Chloride, Total Hardness, pH, Sulfate, Magnesium, Residual Alkalinity, and Sodium. The Advanced Kit measures the same things, but instead of measuring pH by dissolving a test strip in the iDip reader, it comes with a separate pH/temperature meter.

The heart of this system is the eXact iDip photometer. It is a small hand-held, waterproof (IP67) tester. It has a small sample container that you fill with your test water, then stir around the test strip for whichever test you are running. A push of the button on the iDip gives you a countdown to ensure you mix the test strip in the water for a long enough time, and then it uses a 525 nm light source and a photometer to measure the amount of light that can transmit through. The results are then displayed on the meter’s digital screen as well as transmitting via Bluetooth to your paired smart device running the App.
