Some believe that amongst the chaos of colliding fragments, a mythical form of cosmic dust condenses into Space Nectar—matter so delicious that our Terra-bound taste buds would surely find it incomprehensible. Physics be damned, Moonraker Brewing Company’s extraordinary Hazy IPA is the best estimation of what it may be like to take in this heavenly ambrosia. Space Nectar overflows with flavors of peach, apricot and orange sherbet. Over half of the hop bill is comprised of Cryo Hops® which lend a clean, pungent aroma to this absolute juice bomb. A healthy helping of pale wheat malt and flaked wheat provide the perfect amount of fuzz to complement the bright notes of stone fruit.

Moonraker’s head brewer, Brad Johnson, recommends cooling the wort to 170°F before adding the whirlpool addition to really make those hops pop. Ferment with Imperial Juice A38 or similar strain to add the ideal finishing touch.

Finally, a purpose-built fermentation chamber! Homebrewers have been repurposing refrigerators for fermentation temperature control since as far back as we can remember—and with good reason. These appliances provide excellent insulation from outside temperatures, are usually large enough to fit a typical fermenter used for 5-gallon batches, and provide incredibly even temperature distribution compared to immersed cooling coils. But to call the RAPT a refrigerator made for brewers would be doing this unit a huge disservice. KegLand has engineered a fermentation chamber that cools, heats, and automatically guides your beer through your very own programmed fermentation profiles which can be monitored and controlled remotely via WiFi or Bluetooth.

Virtually any homemade product can be greatly improved with perfect temperature control. The RAPT Fermentation Chamber gives you an electrically efficient means of setting, monitoring and controlling temperature which is perfect for beer making, wine making, salami making, leavening bread, fermenting yogurt, kombucha, kimchi, sauerkraut, making cheers, spirit washes, germinating seeds, growing sprouts, and much, much more. Accurate temp control is one of the most crucial factors to getting reliable and repeatable results.

The RAPT’s control panel comes complete with an integrated color TFT screen. The 4-button color display conveniently shows a log of historic temperature graphs, allows you to start/set/stop temperature profiles, and gives you access to other critical information for that particular fermentation. An integrated secondary regulator can be used to regulate gas into the fridge with the Duotight In-Line Regulator on one side, and on the other you can install an integrated BlowTie 2 Spunding Valve to regulate residual pressure in your fermenter.

For more accurate readings of the core temperature of your fermenter, we highly recommend using a thermowell and the 6.5 ft. probe extension. If you’re using a FermZilla, check out this thermowell with Duotight bulkhead.

Perfect as a Kegerator too!
This multipurpose fridge can also be used as a kegerator. In particularly cold climates where the ambient temp is below zero, this fridge can warm your kegs and prevent them from freezing. This fridge also has a higher keg storage capacity than a conventional kegerator that takes up the same footprint. This unit can hold 4 x 5-gallon kegs on the floor and has enough headroom that you can also fit another layer of 2.5-gallon half size kegs above. To fit beer taps you can drill your own holes through the door.

What is RAPT?
RAPT is a dedicated Internet of Things (IOT) Hub for fermentation logging and control. It’s a free service whereby any RAPT-enabled product can both log and store data to the hub where you can conveniently access it. The RAPT hub can also allow you to control your devices remotely giving you absolute control of the device irrespective of where you are. The RAPT portal enables you to make complex temperature profiles that involve different temperature settings over time meaning you can start/run a temp profile giving you a set and forget experience. The RAPT portal also controls the alert/notification process for you so you can receive email notifications in the off chance that something doesn’t go to plan.

Why Buy a Fridge Over a Glycol Chiller?
Although we’ve had great success controlling fermentation temps with an immersed cooling apparatus with a glycol chiller providing the cooling solution, these setups do present several potential issues:

Glycol chillers often require a very cold liquid to enter into a fermenter causing an excessively cold part in the fermenter core which leads to uneven temperature distribution.
Glycol chillers consume significant amounts of power and in most instances more than double what this fridge would consume.
Glycol chillers often result in spilling sticky glycol especially when hoses are connected and disconnected to the fermenter.
Glycol chillers generally require penetrations through the walls/lid of the fermenter making the fermenter less sanitary and requiring more cleaning.
Often fermenters are not made with sufficient insulation, so when using a glycol chiller much of the chilling is lost to the ambient environment. This is not only power inefficient but you can end up with a large temperature gradient. This temperature gradient can result in convection currents in the fermenter that make it difficult for yeast and other solids to settle out of suspension so clarification of the beer takes significantly longer.
Many glycol chillers and fermenter combinations do not have sufficient power or are not well enough insulated to cool to sub-freezing temperatures so cold crashing is not possible. This is a significant compromise to a temperature-controlled solution and also results in less ability to clarify the finished beer.
For these reasons KegLand has developed the world’s first dedicated RAPT-enabled fermentation chamber that can cool down to -2°C (28°F) and heat up to 50°C (122°F) even in hot and cold weather.

Announcing: CellarScience ALDC Enzyme – Avoid “Hop Creep”… Finally Available in Homebrewer Quantities!

CellarScience® ALDC Enzyme - 1 oz AD108AStop hop creep before it happens with ALDC from CellarScience. As modern beer styles call for increasing amounts of dry hops, a new risk for off-flavor in the finished beer arises. Hop creep is the result of yeast beginning a new fermentation when dry hops with trace amounts of fermentable sugars are introduced to the finished beer. This results in further production of Diacetyl and, if yeast are not given enough time to clean up after themselves, can lead to higher levels of Diacetyl in the finished beer. Diacetyl is often referred to as a butter or butterscotch like flavor and is not desirable in most styles, especially at high levels. ALDC, or alpha acetolactate decarboxylase, is a helpful enzyme that can be added at yeast pitching or along with your dry hops to limit the production of Diacetyl to protect your finished beer from off-flavors and reduce the conditioning time needed before its ready to bottle or keg.

Use:
Packaged in 1 oz dropper bottle. Add to fermenter at time of yeast pitching or dry hopping at a rate of 1 dropper full per 5 gallons or 3 mL per bbl.

Additional Notes:
Although commonly added to heavily dry hopped beers, using ALDC during fermentation can benefit any beer style by reducing Diacetyl production. Brewing hops all contain the naturally occurring enzyme AMG or amyloglucosidase which breaks down long chain sugars into simple sugars that yeast can ferment. The reason hop creep is a relatively new phenomenon is due to the changing ways in which hops are dried and processed. As brewers started to demand more aromatics from their hops, growers began to lower the kilning temperatures to preserve volatile oils. This led to higher levels of AMG left on the hops as well, where they were previously denatured at the higher kilning temperatures. With more AMG present on the hops, dry hopping now leads to more fermentation activity and higher levels of Diacetyl produced after the primary fermentation is complete. Although the simplest remedy to hop creep is time—waiting for the yeast to naturally clean up the extra Diacetyl—ALDC is a great way to reduce lag time and the risk of off-flavors in your finished beer.

While You’re at It… Stock Up On Wyeast

Wyeast has let vendors know that they are temporarily stopping production due to covid related issues. When I first read the announcement I interpreted it as they were going out of business. I was very happy when I read it more closely. This is a temporary stop in production.

We’re starting to see some strains sell out. Of the three that I originally highlighted, Pacman is now sold out across the board.  Beyond that, each retailer has a number of strains that are unavailable. As an example, I’m seeing well over 25 non-seasonal strains out of stock at AIH. Many popular strains are still in stock, but we are starting to see repercussions of Wyeast’s production stoppage.

Order now to stock up on your favorite Wyeast strains as availability may be an issue soon.

First Pour Foam Reduction
Every kegerator owner knows the letdown of pouring your first pint of the day and getting too much foam. Even with perfectly balanced draft lines, first pour foam is sometimes unavoidable simply due to the temperature of the faucet itself. Running beer through the faucet will drop the temperature, and the foaming will subside, but not without a bit of wasted beer from pouring off excess head. The NukaTap Stealth Bomber beer faucet drops to beer serving temperature much faster thanks to its lower thermal mass. Simply put, the bulkier the faucet is, the more beer is needed to flow through and chill the tap. The NukaTap is over 20% lighter than its Intertap predecessor, and even lighter still compared to other brands of faucets.

Improved Laminar Flow
The inspiration for the NukaTap name comes from its uniquely designed “nuke-shaped” shuttle that resides on the inside of the faucet. The NukaShuttle went through numerous rounds of redesigns and countless hours of testing to find a shape that provides superior laminar flow. This means that liquid passes by the shuttle with very little resistance, allowing highly carbonated beers or hard seltzers to pour like a dream.

Sanitary Design
The NukaShuttle is the world’s first seamless single-piece design. Traditional taps feature an o-ring seated on a stainless steel shuttle, which can cause a couple of issues. After many pours, the stainless shuttle rubbing against the internal body of the faucet will create small fissures that become potential infection sites, and the seated o-ring can be difficult to clean in place, making your draft cleaning and sanitizing process less effective than you realize. The NukaShuttle is an advanced TPV rubber matrix that has been seamlessly formed over a durable PP skeleton. This single-piece design eliminates the pitfalls of older manufacturing methods, making it one of the most sanitary faucets on the market.

Forward Sealing vs. Rear Sealing
From tap rooms to home bars, forward-sealing faucets are the ideal choice for any draft setup. In traditional rear-sealing taps, beer will drain out of the entire faucet when it’s in the closed position. This means the internal mechanism is coated in beer, which then dries and becomes a sticky residue. Forward-sealing faucets, on the other hand, keep the tap full of beer so it never has a chance to dry and gunk up the internal parts. This makes the faucet much easier to clean and also reduces the chance of off flavors transferring to your beer while you pour.
