Originally developed by Barebottle brewer John “Magic” Montes, Torcido took gold in the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame. Brewed with Viking Pilsner, flaked corn, a dash of Carahell®, and hopped with two additions of Crystal and Saaz.

Barebottle Brewing Company was born in San Francisco, CA with the idea that craft brewing shouldn’t adhere to the strict guidelines of established beer styles. Founded by a trio of friends and former classmates, they continue to pay homage to their homebrewing roots by printing a scaled down version of their recipe on every label. If you ever see one of their creations out in the wild, we highly recommend that your buy it, drink it, and then brew it!

Harvested from the adjoining British counties of Herefordshire and Worcestershire, apples grown in this region benefit from high quality soils, nearly year-round rainfall, and a mild maritime climate. Having been home to apple orchards for thousands of years, the climate of this area allows the apples to slowly mature, which produces fruit with excellent complexity and flavor balance.

Apple cider concentrate is produced by removing water from freshly pressed apple juice through evaporation while under vacuum. This process concentrates the natural sugars in the juice, making the resulting product easier to store for longer periods and less cumbersome when transporting.

Use:
We recommend diluting with 6 parts water to 1 part concentrate to reconstitute the original apple juice. This will leave you with a solution that is approximately 1.040 SG with an estimated alcohol content of 5.2% ABV after fermentation. The solution can be used as a flavor ingredient alongside fresh apple juice to impart high levels of tannin that will give your hard cider a wonderful mouthfeel, complex flavor, and great color and body.

0.5L good for 1 gallon.
3L good for 6 gallons.

Brewers make the tea but SCOBY makes the booch! WLP600 Kombucha SCOBY, a symbiotic culture of bacteria and yeast that is used for fermenting sweet tea into kombucha. White Labs’ culture is free of food pathogens and has been genetically identified to know specially what yeast and bacteria are involved in the fermentation of kombucha. This SCOBY has medium acetic acid production and low alcohol production.

One SCOBY will make 1 to 5 gallons of kombucha, but the White Labs pouch only contains enough starter liquid for 1 gallon of kombucha. Typically, 1 to 2 cups of starter liquid is recommended per 1 gallon batch. Previously made kombucha or store bought unflavored, unfiltered kombucha will work as starter liquid.

With proper care and storage, you can reuse your cuture for multiple batches. For short term storage, a clean, food grade container placed somewhere out of direct sunlight and left undisturbed is suggested. If you will not be using your SCOBY for an extended period of time, place it in a clean, food grade container in the refrigerator for up to 3 months. Feeding (adding new tea) as needed to keep the SCOBY from drying out.

Pin Lock users are regularly left out when it comes to parts and accessories.  Point in case… I am aware of very few offerings for pin lock post o-rings.  Most shops sell the same o-ring for both ball and pin lock posts.  Pin lock post o-rings are larger than ball lock post o-rings.

The DigiMash system represents the best value in electric all-grain brewing you’ll find. With a 9 gallon Digiboil electric kettle and the Digimash stainless steel mashing acessory pack included, this is by far the most affordable way to get into electric all-grain brewing. It may not have all the bells and whistles of the BrewZilla, but it does have everything you need to mash and boil all in one unit. Setting up and using the DigiMash couldn’t be easier. Simply place the false bottom inside the kettle and install the malt pipe, fill with water and heat to your desired strike temperature, then add your grain and set your desired mash temperature on the digital controller. Once your mash is complete, lift up the malt pipe, drain the wort and sparge, then remove the malt pipe and proceed to boil.

If you’re deciding between the DigiMash and the BrewZilla, there are a couple of key differences worth noting. One of our favorite features of the BrewZilla is the programmable mash steps and delayed start, which the DigiMash does not have. You can still step mash by simply raising the temperature manually on the controller, but the automatic steps are a convenient feature if you want to set it and forget it.

The other major difference between the two systems is that the BrewZilla features a built-in pump for recirculating the mash. Recirculation is a great way to improve mash efficiency, but it is far from required for a successful brew day. Using an external pump with the DigiMash is also an option, and one can be integrated for mash recirculation quite easily. Simply connect the ball valve to the inlet of your pump, and then connect the outlet of the pump to our Sparge Arm Assembly.

This model comes with the 35L DigiBoil, which has two built-in heating elements that run off a 110V plug. One element is 1000w and the other is 500w for a combined 1500 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage both elements to quickly go from mash temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s).

Integrated stainless ball valve comes with a 13mm barb (approx. 1/2″). The barb can be removed to attach fittings with 1/2″ FPT, such as our female threaded quick disconnect.

Installation & Use:

  • Place the false bottom inside the kettle
  • Install the wire support in the channel located at the top of the kettle
  • Place the mesh screen inside the malt pipe and attach the handle
  • Lower the malt pipe into the kettle so it rests on the wire support
  • Fill with strike water and heat to desired temperature
  • Add grain, stir until well mixed, and adjust controller to target mash temperature
  • When your mash is complete, use the handle to lift out malt pipe and rotate 90° so the malt pipe feet sit on the wire support
  • Allow the wort to drain into the kettle and sparge the grain with warm water (165-175°F)
  • When you’re done collecting wort, remove the malt pipe and proceed to boil

Please note: only the 500-watt element should be used to increase mash temperatures when the Malt Pipe is in place. Using the higher watt element(s) with the Malt Pipe inserted may cause scorching of the grain.

The KegLand Keg Reactor Lid fits any ball lock keg with an oval lid, and allows you to have continuous carbonated water on tap fed by your house water supply. All you do is install the lid, hook your house water supply up to ball lock inlet on the Reactor Lid, cool the sealed filled keg down to 40° F or less, attach your gas line and set your regulator for 30 to 50 PSI, and attach a water line to dispense carbonated water.

Basic Setup & Use:
1. Position the keg inside your fridge, kegerator, poolroom, or anywhere cold (ideally below 40° F).

2. Attach your dispensing tap of choice to the soda water outpost.

3. Attach your gas to the gas in post.

4. Set your CO2 regulator that is connected to the gas post to 30-50psi. (higher pressures will give you more carbonation so set your regulator pressure to achieve desired carbonation level).
NOTE: It’s recommended to use a check valve in your CO2 line to prevent back flow into your regulator.

5. The first time you use this unit it’s a good idea to purge the air from the head space of the keg. To do this pull the pressure relief valve on the keg lid about 5 times for 2-second bursts.

6. Connect the house tap water to the water inlet post on the lid of the keg. We recommend using a check valve for this application to prevent soda water going back into your house water supply. You can use either a DuoTight Check Valve item item C53 for 9.5mm outer diameter water tubing or a DuoTight item X34 if you are using 8mm diameter water tubing. For this unit to work well the house water pressure should be 30-50. To regulate your water pressure we would recommend the use of our Inline Regulator KL15035 Inline Regulator.

This simple unit will give you continuous carbonated water as long as the water it refrigerated and you have a supply of C02 and tap water. Great for a bar, cafe, restaurant, or just at home.

This is capable of carbonating 2 gallons per hour if you have sufficient ability to cool the water. The colder the water and the higher the incoming gas pressure the higher the carbonation level you will have.

Note that our KegLand Series X Kegerators feature two threaded plugs on the back top corners which fit our item C35, allowing you to have a male ball lock connector for both your water and your gas. This makes the Series X, with its ability to chill as low as 27° F, a perfect place to house your soda water system.

NOTE: Your house water pressure should be 30 to 60 PSI. If it is higher than this, use a water pressure regulator to reduce your house water pressure to 50 PSI before entering the keg.
