The fine brewers at BrewDog have released a massive back catalog of HUNDREDS of BrewDog Beer Recipes.   Not only does the catalog contain homebrew recipes, it contains a cool how-to on the homebrew process.  Kudos to BrewDog for releasing these!  This is a clear sign of their connection with the craft beer and homebrewing community.

Review: Barebottle Brewing Company Torcido Lager – Homebrew Recipe Kit

Torcido Lager is a Mexican Lager. Sort of. I don’t know much about the style definition of a Mexican Lager, but MoreBeer’s site describes the recipe creation from Barebottle Brewing (San Francisco, CA) as non-traditional. Apparently, Barebottle likes mixing things up, so they describe this beer as a Mexican Pilsner with a German Helles twist. For Barebottle, this beer scored a Gold in the 2019 GABF, so crazy description aside, I figured the beer had some cred behind it.

As the name implies, this recipe is crafted around the specialty ingredient of White Koji. Koji is a staple ingredient in the fermentation processes for sake, soy sauce, miso, and more. But White Koji, in particular, is gaining ground as a new brewing ingredient which can impart a beautiful citric acidity in the final beer.

This recipe from Proper Sake Co. results in an incredibly crushable light pale ale with a slight haze in the glass. The malt character will hang in the background as Cascade and Huell Melon support the overall refreshing, citrusy quality enhanced by the White Koji.
