Whether you’re in constant search of new ways to push the “traditional boundaries” of brewing, or you’re just looking for another crushable crowd pleaser to add to your arsenal of recipes, Proper Sake’s White Koji Ale is the beer for you. As the name implies, this recipe is crafted around the specialty ingredient of White Koji. Koji is a staple ingredient in the fermentation processes for sake, soy sauce, miso, and more. But White Koji, in particular, is gaining ground as a new brewing ingredient which can impart a beautiful citric acidity in the final beer.

This recipe from Proper Sake Co. results in an incredibly crushable light pale ale with a slight haze in the glass. The malt character will hang in the background as Cascade and Huell Melon support the overall refreshing, citrusy quality enhanced by the White Koji.

Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and “free the thiol”, boosting the tropical bouquet of your beer to supernatural levels. Fact: Firestone Walker has been named “Mid-Size Brewery of the Year” four times. Another fact: Pale 31 has won 10 Gold Medals since 2003 (yeah, that’s one a year!).

The Pale 31 California Pale Ale is what some refer to as “The Perfect American Pale Ale”. Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. After having one, you’ll most likely want another, and being under 5% ABV makes this a little more possible! The recipe consists of our ultralight liquid malt extract, Munich malt, and dextrin for added mouthfeel. The hops are a perfect blend of Fuggles, Chinook, Cascade and Centennial.

The style accentuates hop character while maintaining a smooth and creamy mouthfeel. Light in color but hazy due to heavy dry hopping, yeast selection, as well as additions of oat and wheat . Low in bitterness with a huge hop character due to hop-bursting, this beer will satiate even the biggest hop head.

The North East IPA has become popular nationwide thanks to breweries like Tree House Brewing, The Alchemist, Hill Farmstead and Grimm Artistanal Ales. After my first taste of this delicious style, I knew that brewing it at home was a must.

Symons Galaxy Kits at MoreBeer

It’s a big brewing world out there, make sure you see as much of it as possible! Australian Sparkling Ale is one of those mysterious beer styles that a lot of us had never sampled (or even heard of, really). But its light, easy-drinking body paired up with delicious hop-forward flavors and aromatics make it an outstanding, sessionable brew. Pilsner dominates the malt profile with a dash of White Wheat and Carapils for body and mouthfeel, allowing the hop combination of Galaxy and Strata to really pop. Similar to how the best view of the Milky Way is on a moonless night in the Outback, these hops are on gorgeous display as post boil and dry hop additions, with very little bitterness to cloud the citrus, tropical, and cannabis character they impart.

Symons Galaxy was first brewed at Imperiale Beer Project in Brentwood, CA as part of a virtual collaboration with Australian beer historian, Peter Symons. Who better to have at your side (albeit through the computer screen) than the gentleman who literally wrote the BJCP guidelines for the style? This collaborative effort resulted in a unique, modern take on the ASA style—introducing Strata, a non-Australian hop, into the mix to complement the heavy additions of Galaxy hops. Symons Galaxy was a smash hit, and is sure to satisfy any hop head out there.
