russian river consecration homebrew

From MoreBeer… “Beer lovers rejoice! Vinnie from Russian River Brewing Co. has released his Consecration recipe to us, and we’re very proud to be able to offer it to the homebrewing community. Consecration is a sour dark ale aged in a Cabernet Sauvignon barrel. It is aged for 4 to 8 months with currants and brettanomyces. You can look for rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet.

What sets this kit apart from any other kit out there, is the fact that we include a chunk of an actual consecration barrel in each one! Whether or not the bacteria from the original beer will form their own colony in your beer is hard to prove right or wrong. Either way, we think it is pretty cool!”

Add to your favorite homebrew recipe and more.  I’ve added tart cherry concentrate to a Flanders Red that I brewed.  I used Jamil’s Recipe from Brewing Classic Styles and fermented with Wyeast Roeselare.  Note the the addition of tart cherries is not in the the original recipe.  The beer was fantastic.

Here, she explains the science behind the brewing process and shares her recipes so that you can experiment at home. Recipes and styles featured in the book include:
– German Berliner Weisse (tart and refreshing) and Gose (salty and dry)
– Belgian Lambics, gueze, Flanders red ale and fruit beers
– French Farmhouse ales such as saison and biere de garde

Lambic (Classic Beer Style Series) available in Kindle Edition

Lambic (Classic Beer Style Series) Kindle Edition by Jean-Xavier Guinard is part of the Classic Beer Style Series of books.  This title may also be available in print.

More Info

From the book description, check product page for current description, price and availability:

After studying this unusual, fruity beer style extensively in Belgium and at the University of California-Davis Department of Fermemtation Studies, Jean-Xavier Guinard presents his findings with detail and historical intrigue.

This book was originally released in 1990 as part of the Classic Beer Styles Series.  That series devotes an entire book to a single beer style and covers many beer styles.  For whatever reason this specific title went out of print.  Just this title, the rest, or most at least most of the rest of series, remained in print.  This led to some very interesting pricing.  Some sellers had stocks of brand new books.  Supply and demand took hold and it wasn’t uncommon to see this title sell for $100 or $200 or even more for a new copy.  Used copies were, and generally are, available for less, but generally very expensive, at least in my opinion.  Finally, in 2016, this title was released on the Kindle platform and now, generally sells for what I would call a reasonable price.  Get the current price below.

Kindle Edition books can be viewed on your Kindle Device or on free reader applications available for your iPhone, Android or Windows smart phone – and  for your web browser via Amazon’s Cloud Reader.

  • This includes an actual chunk of Consecration barrel from the brewery
  • Availability of Consecration Kits at MoreBeer can be touch and go (guessing this has to do with sourcing actual Consecration Barrels, but that’s only a guess).  As such I don’t often see this kit specifically discounted.  As of this posting, both all grain and extract versions of this kit are in stock. These just came back in stock as of the 6/16. Check product page to see if you can still get in on this batch.
  • Consecration is awesome… A note on Consecration:  I’m not big on picking favorites.  I think there are far too many good things to pick favorites on most things.  Having said that, if I were going to write down a list of my favorite beers, Consecration would certainly be towards the top.  This is an amazing beer.

Announcing: SafBrew™ BR-8 Dry Brettanomyces Yeast!

SafBrew™ BR-8 Dry Brettanomyces Yeast

SafBrew™ BR-8 Dry Brettanomyces Yeast

THE FIRST DRY BRETT FOR FLAVORFUL “FUNKIER” BEERS

SafBrew™ BR-8 is the first Brettanomyces bruxellensis yeast available to brewers in a dry format. BR-8 is designed for bottling and/or cask conditioning. It offers all the flavor benefits of ‘wild’ Brett yeast, but with more control and reliability, eliminating the risk of over-carbonation and gushing after bottling. BR-8 has the ability to ferment glucose, fructose, maltose, and maltotriose exclusively. BR-8 is non-diastaticus meaning it will not ferment dextrins, preventing over-attenuation in bottling.

Selected specifically for secondary fermentation in bottles or casks, SafBrew™ BR-8 produces phenolic compounds that create a distinctive finishing touch that evolves over 1 -3 months, with funkier notes (barnyard, horse, leather…) nicely balanced by refreshing, fruity notes. Younger beers will display aromas of pineapple and light funk as the beer ages funk and leather notes increase.

SafBrew™ BR-8 Features:

  • Fermentation Temperature: 59 – 77°F
  • Aromas: pineapple, funk, horse, barnyard, animal, leather
  • Dosage Rate: 5g/26 Gallons
  • Note: One 5g packet can be used to treat 5 gallons but may produce a hazy beer.

SafBrew™ BR-8 Instructions of use:

Sprinkle the yeast in a minimum of 10 times its weight of sterile water at a temperature of 77°F to 84.2°F. One 5g packet should be rehydrated in 50 ml of sterile water. Leave to rest for 15 to 30 minutes. Gently stir until obtaining a yeast cream.

Add rehydrated yeast and priming sugar to your beer. Carbonation will be achieved in 1 to 3 months. At the end of the refermentation, the beer can be chilled down and will gain in roundness after 2 to 3 weeks. Carbonation at lower end temperatures (e.g. 59°F) can take over 3 months.
