“Funkwerks, a saison-focused craft brewery in Fort Collins, Colo., has racked up more than its fair share of awards since opening in December 2010. Co-founders Brad Lincoln and Gordon Schuck took home gold and silver medals at the 2011 and 2012 Great American Beer Festivals (GABFs), respectively, for their flagship Saison, and the brewery won gold for Deceit (a Belgian-style golden strong ale) and was named Small Brewing Company of the Year at the 2012 GABF.

In 2014, Deceit won a World Beer Cup silver and Raspberry Provincial took home GABF gold. Raspberry Provincial is a kettle sour, which is a beer that relies on bacterial souring pre-boil to achieve its tart, refreshing character. Unlike, say, traditional lambic, which requires months or years of aging with a mix of microbes to achieve a complex, funky sourness, a kettle-soured beer needs only a day or two to gain a pleasant lactic acid tang. The method isn’t ideal for Flemish red, oud bruin, and lambic-style ales, but it’s perfect for gose, Berliner weisse, and other “clean sour” styles that primarily exhibit a lactic character.”  – Read the complete article on the Homebrewer’s Association’s website

After studying this unusual, fruity beer style extensively in Belgium and at the University of California-Davis Department of Fermemtation Studies, Jean-Xavier Guinard presents his findings with detail and historical intrigue.


 

This book was originally released in 1990 as part of the Classic Beer Styles Series.  That series devotes an entire book to a single beer style and covers many beer styles.  For whatever reason this specific title went out of print.  Just this title, the rest, or most at least most of the rest of series, remained in print.  This led to some very interesting pricing.  Some sellers had stocks of brand new books.  Supply and demand took hold and it wasn’t uncommon to see this title sell for $100 or $200 or even more for a new copy.  Used copies were, and generally are, available for less, but generally very expensive, at least in my opinion.  Finally, in 2016, this title was released on the Kindle platform and now, generally sells for what I would call a reasonable price.  Get the current price below.

116 total ounces.  Tree ripened tart red Montmorency pie cherries packed in water. Grown in Willamette Valley of Northwestern Oregon.  Canned by a three-generation family-owned-and-operated company in Salem, OR.

You could add these to your beer.  The addition of fruit is one of two instances that I will employ secondary fermentation.  I added tart cherry concentrate to a Flanders Red I brewed.  I used Jamil’s Recipe from Brewing Classic Styles along with Wyeast Roeselare.  Note the the addition of tart cherries is not in the the original recipe.  The beer was fantastic.
