Step by Step Temperature Build Using the STC/ITC-1000

The STC-1000 is versatile digital temperature controller. It’s manufactured by a number of manufacturers

Specifications can very but you can generally speaking these are dual stage temperature controllers that you can use to help control temperature of your kegerator, fermentation chamber or as part of your brew system. Dual Stage means this can control a heating and cooling device.  Alternatively, it can control a heating or a cooling device.   Note that these are unwired controllers and will require some work to implement in your project.

STC-1000 vs ITC-1000

The STC-1000 is a great controller, arguably the best value in temperature controllers, especially if you’re on the handy side.  The ITC-1000 from Inkbird is what I would call and upgrade to the STC-1000.  The big upgrade is that the ITC-1000 display ins deg F and deg C, where most versions of the STC-1000 were deg C display only.  Beyond there, it’s my understanding that there are some usability improvements in the ITC-1000.

Some things to consider when buying an STC/ITC 1000 controller

  • Input voltage. These can be powered by DC and AC 120 to 240
  • Readout capabilities. Many STC-1000 controllers read in Celsius only. Some have the ability to read in Celsius or Fahrenheit.

This dual-stage temperature controller is perfect for managing temperatures of your kegerator, fermentation chamber or keezer. It allows for a hot and a cool trigger to be individually controlled, so you could have your fermentation refrigerator hooked up to the cold trigger and a heat source to the hot trigger. If the temperature falls below the target value, the heating device will be turned on, and vice versa.

Note: this project deals with electrical current and DIY’ers should pursue the build at their own discretion. Read through the directions entirely to have a full understanding of the build before diving in. If you are unsure of your abilities, consult with someone well versed in electrical wiring.

To control ferment temperatures you can place the probe inside the space that is being cooled or heated (often a refrigerator) or you can place the probe directly into the ferment using our Stopper Themowell, FE624. You can change from cooling to heating mode directly from the digital control panel. When in cooling mode, and hooked up to a refrigerator or other cooling device, the controller turns the compressor on when the ambient temperature rises above your set point. When in heating mode and hooked up to our FermWrap (preceeding page) the controller turns on the heater when the temperature drops below your set point. A FermWrap around a fermenter or inside a unplugged refrigerator can be the ideal solution for those cold winter ferments. To control a pump when mashing you would install a thermowell in your mashtun. The unit features an adjustable differential down to within one degree in both heating and cooling modes. This means you can precisely control an environment to within one degree of your set point.

Ranco ETC (Electronic Temperature Controller) model 111000.  Single stage digital temp controller,

Use as an overriding thermostat to control your compatible kegerator chest freezer, refrigerator or fermentation chamber.  I believe this is an unwired unit.  If that’s the case, you need to manually wire it yourself.

Ranco or Inkbird?

Why would you choose this over something like the Inkbird Dual Stage Temp Controller?

  • For homebrewing applications, Inkbird ITC-308 series controllers are going to be tough to beat. They offering dual stage temp control and are generally economical.
  • The Ranco is generally more expensive and offers fewer features when compared to the ITC-308.
  • In my opinion, the advantage that the Ranco does have is… ruggedness.  These are built for commercial applications.  This question in my mind is… do you need a rugged commercial quality unit?  If yes, then this is a controller you may want to look at.

A Look At: ITC-1000 Temperature Controller + PDF Manuals & Build Instructions

Here’s at the ITC-1000.  First, some background… The STC-1000 is a very popular homebrewing temperature controller.  One caveat of the STC-1000 (for some) is that the vast majority (maybe all?) display in Celsius only.  Yes you can do some firmware re-flashing and such things, but as far as off the shelf units, the vast majority read in Celsius,

Enter the Inkbird ITC-1000… It’s 110 V, Dual Stage (can control both heating and cooling output), has an alarm to indicate sensor failure or high temperature and… it displays in Fahrenheit… finally!  It’s also said to be more user friendly than the STC-1000.

The STC-1000 was already a great controller, arguably the best value in temperature controllers.  These improvements seem to make a great thing even better.

Tip: Using a Heating Mat To Help Maintain Fermentation Temps

I’ve used a heating mat in my fermentation chest freezer for years.  Most of these don’t provide a whole lot of heating capacity.  Which, in my book, is great.  The one I use is well under 20 watts.  That has no trouble raising my fermentation chest freezer (located in my basement) by several degrees.  I use this throughout the year whenever I want to push fermentation temperatures higher.  I do not set my fermenter on the mat.  I simply set it in the chest freezer, thereby warming up the ambient air inside the fermentation chamber.

Over the years, I’ve used this with both a single and a two stage temp controller.  This has the effect of making a single stage temp controller into a dual stage controller.  The heating mat continuously heats the ambient air and the temp controller/chest freezer act to correct that as it gets too warm.  See Homebrew Hack: Mimicking Dual Stage Temp Control with a Single Stage Controller for additional details on that.

This process is more efficient with a two stage controller.  The controller cycles on each stage, cooling or heating, as needed.  If you’re in the market, check out the ITC-308

Beyond getting the appropriate wattage for your setup, I would also recommend getting a waterproof model.  Not that you want to have these around water, but it’s nice to have some moisture resistance, especially when fermentation chambers can get humid.
